<span style="font-size:18px;"> 正常奶缸和咖啡杯的距離在5—10釐米左右(參考),確切的說應該是缸嘴距離咖啡液麪的距離.每做拉花人在這一點上面都有所不同,沒有完全一樣的高度和距離,也沒有固定的高度,但是目的只有一點,就是讓奶泡與咖啡充分的融合在一起,由於奶泡密度較小且輕,我們在融合時往往會選擇抬高奶缸與咖啡液麪的距離進行融合,避免破壞油脂的乾淨和顏色.所有我們要明白奶泡越厚距離越高(衝擊力),相反奶泡越薄距離可以拉低. </span></p>

<span style="font-size:18px;"> 正常參考值是:奶流在不斷的情況下偏細一點.奶流大小的目的是爲了保證在充分使奶泡和咖啡融合的同時不去破壞油脂的乾淨程度和顏色,過粗的奶流會有較大的衝擊力,會有一定幾率出現砸入杯底產生亂流的現象,所以一般會選擇較細的奶流去進行融合,靈活一點的話就是奶流的大小要配合奶泡的質量而進行,比如:奶泡偏厚我們就要較高距離和較細的奶流,相反奶泡較薄我們可以選擇微粗奶流和較近距離的去融合.</span></p>

<span style="font-size:18px;"> 所以拉花時,我們根據我們要的拉花效果,來選擇適合的融合份量(流動性),我最愛說的一句關於融合的話就是:把融合看做是蓋樓打地基一樣,融合的越多根基越穩定,融合越少根基流動性越強。</span></p>

<span style="font-size:18px;">2. 奶缸與液麪的距離:找準了起花點後接下來就是進行抖動拉花成型了,這個時候一定要降低奶缸的高度讓奶缸的尖嘴近距離接觸液麪,距離越近越容易出圖,如果距離過高,會有較大的衝擊力不會出圖.</span></p>

<span style="font-size:18px;">3. 抖動方法: 很多初學者對於奶缸抖動這塊會有一個誤區,正確的抖動方法是奶缸像鐘擺一樣以把手爲軸均勻的擺動而不是整個奶缸平移一樣的晃動,也不是奶缸左右搖頭一樣的晃動.做心型圖案要定點擺動,也就是說擺動的時候不要向前或者向後移動.</span></p>

<span style="font-size:18px;">4. 抖動拉花時奶流大小:做心形拉花時奶流相對偏大一點做出來的心較飽滿較圓潤而且線條較明顯,如果抖動拉花時奶流過小會出現心比較扁,比較小甚至更容易歪掉,所以抖動出圖時要相對大點奶流.(奶流越大牛奶從缸杯出來後是向前呈弧度留下來,奶流越小牛奶從缸杯出來後呈垂直留下來).</span></p>

<span style="font-size:18px;">5. 收尾:收尾是指圖案製作完成99%以後剩下最後1%的收尾結束圖案製作,雖然僅有1%但很多新手就在最後收尾這一刻要麼咖啡溢出杯中要麼帶動整顆心變形變長,收尾的時候一定要穩要準,"穩"代表把奶缸拉高,而拉高的同時手要穩不要讓奶流抖動和移動,"準"代表找準這條心的正中間分界線,提高奶缸保持較細的奶流直直的拉過去收尾!</span></p>
