咖啡店也會像外婆家一樣門庭若市，要等上一個小時才能喫上熱乎的食物。這樣的場面出現在了武林路皇后公園一間開業不久的咖啡店，這家咖啡店主打華芙餅，很受食客歡迎。</p>
<p>
最近杭州新開的咖啡店不止這一家，寒煙、朗德·瑪麗、曉客廳、茶蜜、瑞井……這些都是文藝氣息頗濃的名字，都是這個月杭城新開的咖啡店，大概10多家，而據杭州市咖啡西餐協會的統計數據，每年杭州平均新增的咖啡店也才20-30家。杭州的咖啡店有點開瘋了。</p>
<p>
連鎖大牌加緊開店</p>
<p>
本月底，COSTA咖啡在杭州的第十家門店即將開業。星巴克今年先後開出古墩印象城店、浙江日報店、西溪印象城店。可以說，有商業綜合體的地方，就不會落下這些國際知名的咖啡連鎖。今年初，星巴克在中國內地的門店數量接近700家。星巴克作爲咖啡行業的大佬，今年的新開店預算是300家。到2015年，星巴克在全國將擴張至1500家。</p>
<p>
2010年麥咖啡在中國開出第一家店。這個在美國賣過星巴克的咖啡品牌，經過三年的推廣，全國麥咖啡門店已經達到516家。爲了滿足年輕顧客更加多元的用餐需求，麥當勞在5月20日推出浩浩蕩蕩的招人計劃。準備着力拓展麥咖啡的中國市場。</p>
<p>
預計到2013年底，麥咖啡在全國的總數將超過750家。其中，浙江地區15家，杭州地區佔到了10家。麥當勞的相關負責人說：“到目前爲止，麥咖啡的拓展依託的是現有的麥當勞門店，並沒有單獨的麥咖啡門店。”</p>
<p>
爲了吸引國內的顧客，洋咖啡連鎖花招百出。麥咖啡於近日更新了菜單，將更適合國人的亞洲茶系列添加到了飲料單上。星巴克、太平洋則推出了“糉子”。星冰糉今年更是放下身段，加入團購大軍。在業內人士看來，洋品牌的本土化舉措，不僅分食了傳統的中式點心市場，也爲自己的品牌貼上了中國標籤。</p>
<p>
個性小店一個月新開十幾家</p>
<p>
杭州新開的咖啡店可以用井噴來形容，最近一個月新開了十幾家。一位業內人士說，最近兩三年，大家的口頭禪漸漸從上哪兒撮一頓，變成了去哪兒喝一杯。</p>
<p>
韓國品牌咖啡店“漫咖啡”的負責人韓小姐說：“店裏華芙等產品與咖啡的點單率幾乎是五五分，更多的客人是先點華芙後點咖啡。”相比咖啡而言，華芙和吐司的利潤空間更大。同爲韓國品牌，“咖啡伴你”即將開出杭州的第三家門店。</p>
<p>
應對咖啡店翻桌率不高的情況，有的咖啡店採取提價來維持收益，有的則選擇了豐富菜單。很難想象一家咖啡店的招牌產品竟然是鯽魚面，這樣的情況發生在了寒煙咖啡館。咖啡館負責人說，在中午的就餐高峯，鯽魚面能賣出二三十碗。這裏儼然成了附近寫字樓白領的新食堂。更多像甘藍這樣的咖啡店因爲蛋糕銷量攀升，把甜點從外包變成了自家手作。</p>
<p>
去書店看書，是不是很適合來一杯咖啡?不久前試營業的“曉客廳”走的就是這種路線。沿襲雕刻時光、菲比咖啡的風格，書店加咖啡的模式也紮根進了曉風書屋。</p>
<p>
從杭州市咖啡西餐協會的統計數據來看，目前杭州的咖啡館數量在600家左右，並以每年20到30家的速度在穩步增長。可以說，杭州的咖啡消費正在進行第三次飛躍。這點北非咖啡的總經理李曉陽深有體會，“三年前，到我們這裏來進行輔導的咖啡店不超過10家，今年，我們的聯盟店達到了80家。大家已經不滿足於用國外進口的品牌咖啡豆來製作咖啡，而是慢慢開始選擇更爲新鮮的本地烘焙的外國生豆，來提升咖啡的品質。”</p>
<p>
咖啡西餐協會祕書長樓波音說：COSTA咖啡“開咖啡館成了一種新的投資渠道，新開的咖啡館大都向寫字樓、CBD、科技園區延伸，單店面積小投入成本低，菜單多元化。”十年時間，杭州的咖啡館數量暴增了9倍。隨着年輕人對咖啡文化的瞭解，商務人士對咖啡的需求，以後美劇中隨手拿一杯咖啡的片段會在我們的日常生活中出現。</p>
