一路以來一些咖啡書本或網絡上都記載了兩種打奶泡的方法</div>

我選用的是後者, 因方法二的奶泡融合度會比方法一的高很多</div>

技巧 : (建議初心者使用溫度計)</div>

牛奶的份量 – 建議是Pitcher的1/4以上, 1/3以下</div>

打奶泡的起泡量……示範的是Latte, 建議起泡量是牛奶的1/4</div>

</div>
<div>
比喻有8oz牛奶, 奶泡要有2oz, 完成品要有10oz</div>

</div>
<div>
如果是Cappuccino的話起泡量要有1/3以上啊</div>
<div>
</div>
<div>
要怎樣才知道起了多少泡? 實在很難說明, 都是經驗吧</div>
<div>
</div>
<div>
打100次Latte之後就一定知道了, 沒錢買牛奶? 可以用洗潔精加水練習啊</div>
<div>
</div>
<div>
牛奶開始前溫度……冷一點會比較易掌握, 從正常4-7oC的冰箱拿出來就可以用了</div>

</div>
<div>
牛奶完成後溫度……WBC(世界咖啡師大賽)的規則是60-65oC</div>
<div>
</div>
<div>
歐洲的常見溫度都是60oC左右, 澳大利亞常見55oC(個人認爲比較好飲)</div>

<div>
示範的是做生意賣給”香港客人”(即是美式), 他們要求65-75oC(所以煙到鏡頭了)</div>

</div>
<div>
我會在另一篇教學纔會寫寫牛奶溫度對口感和味道的影響</div>

準備好就可以開始了, 先放一下蒸汽, 蒸汽棒開動前要完全進入牛奶裏, 蒸汽棒全開</div>

先不用急著起奶泡, 先用蒸汽棒找一個可以令牛奶成旋渦方式流動的位置</div>
<div>
</div>
<div>
左旋或右旋對完成是品沒有影響的, 總之就是要轉轉轉, 至於怎樣令旋渦轉起來</div>
<div>
</div>
<div>
由於每個人的方法不同, 要自己找了啊! (先用水試一下吧, 旋渦不能起就不要開始打牛奶)</div>
<div>
</div>
<div>
旋渦起了後纔開始慢慢起奶泡, 方式是要密集而又輕微的 (聲音很小但頻率很密)</div>
<div>
</div>
<div>
蒸汽要在建議溫度前5oC要關, 因關了蒸氣後牛奶會再上升5oC左右</div>
<div>
</div>
<div>
如果想要的是60oC在55oC就要關了啊</div>
<div>
</div>
<div>
特別要說說的是, 一般人認爲奶泡打得水水的就不夠奶泡</div>
<div>
</div>
<div>
我個人認爲這是錯的, 就算起泡量超過了1/3(cappuccino)也可以打得水水的</div>
<div>
</div>
<div>
這就是融合度的問題, 融合度高的話一整個完成品不論最頂或最底層都會有均衡的奶泡</div>
<div>
</div>
<div>
用透明杯拉花的話就可以看得見, 融合度高的話牛奶和奶泡分開的需要時間會比較長</div>
<div>
</div>
<div>
這樣一來拉一些難度高需要時間比較長的圖案, 牛奶去到最後都有奶泡走出來了</div>
<div>
</div>
<div>
相反融合度低的話, 奶泡很快就會浮上面層, 花是拉到的但不能非常仔細</div>
<div>
</div>
<div>
而且咖啡完成後就算馬上飲也不會好飲到那裏, 相信沒有人喜歡牛奶和奶泡分開飲的感覺吧(starxxxx?)</div>
<div>
</div>
<div>
大家可以用透明杯拉花測試一下自己打奶泡的融合度啊</div>
