<span style="font-size:16px;">細度研磨因爲增加了與空氣的接觸面,除了會加速氧化的速度之外,一旦與水結合後,透析速度會是粗研磨的數倍,此時,衝煮人員在時間及水溫上的調節,就變的格外重要了。 無論是用哪一種衝煮方式,只要注意到水溫高低與研磨粗細成正比,與受熱時間成反比的原則,大致上就不會有太大的問題。</span></div>

<span style="font-size:16px;">不同的衝煮咖啡器具需要不同的研磨度,太粗的顆粒萃取不出味道,太細又容易過度萃取,產生苦澀的味道,因此適宜的萃取才能將咖啡中良好的成份完整萃取出來,劣質物保留於纖維質中,一般而言,衝煮的時間愈短, 咖啡粉必須擴張更多表面積跟水接觸,所需的顆粒就愈細;反之,衝煮時間拉長,研磨的顆粒就必須愈大愈粗糙,以免萃取出不必要的雜質。 例如,快速萃取的Espresso,就需要像細的粉般的極細度研磨,爲了使咖啡能充分浸潤以釋放芳香的濾壓式沖泡法,則需要較粗糙的研磨度。</span></div>

<span style="font-size:16px;">例如濾紙或塞風式衝煮法,因爲萃取時間比較短,約在一、兩分鐘左右,咖啡豆就要磨得比法式濾壓壺細一點。 法式濾壓壺的萃取時間在三、四分鐘左右,宜採粗度研磨,如果磨得太細,容易喝到咖啡渣並有焦苦味。 也就是說,萃取時間愈長,咖啡豆就要磨得愈粗,以免造成過度萃取,苦澀味全現;萃取時間愈短,咖啡豆豆就要磨得愈細,以免萃取不足。 </span></div>

<span style="font-size:16px;">使用磨豆機最頭痛的部份大概就是屬清理工作了,一般的基本保養工作如下:</span></div>

<span style="font-size:16px;">2、把咖啡粉的出口處清理一下。</span></div>

<span style="font-size:16px;">咖啡豆內含有油脂,因此一定要定時清洗,否則油脂愈積愈多,時間久了都會產生怪味,即使是再高級再新鮮的咖啡豆嚐起來也會有不好的味道。</span></div>
