36氪曾報道過一個硅谷咖啡品牌 <a href="http://36kr.com/p/5050019.html" style="border: 0px; margin: 0px; padding: 0px; color: rgb(0, 112, 192); text-decoration: none;">Wheelys 咖啡 </a>，不同於傳統咖啡店連鎖經營的模式，承載 Wheelys 咖啡的是一輛輛經過改裝、功能齊全的“三輪車”。咖啡車是流動的，隨走隨賣。成立兩年多，Wheelys 咖啡已經覆蓋了全球70多個國家和地區。</p>

Wheelys 咖啡也於2016年4月進入中國。不同於其他國家“流動咖啡站”角色，Wheelys 咖啡車多在辦公樓、學校和商場空地等<strong style="border: 0px; margin: 0px; padding: 0px;">室內固定區域</strong>。Wheelys 中國CEO白曉帆告訴36氪，早高峯人們對咖啡的需求旺盛，能佔到全部銷量的三分之一；傍晚5點之後需求轉淡。佈置在商場的咖啡車受限於早10點至晚10點的營業時間，運營效率較低。相比之下，辦公樓不僅租金低（商場租金是辦公區域的3-5倍），營業時間更靈活，且針對固定一批的<strong style="border: 0px; margin: 0px; padding: 0px;">白領人羣</strong>，需求更直接，習慣也容易培養。</p>

過去幾年餐飲行業面臨的一個問題是運營成本上升，一是租金，二是人力。Wheelys 咖啡最大的優勢在於其咖啡車的運營模式，每個點只需10-15平米的場地，2-3個員工，<strong style="border: 0px; margin: 0px; padding: 0px;">省下了一筆可觀的固定成本</strong>。降低的運營成本可以用於補貼咖啡的原料成本，反映到終端消費者，可以享受品質與價格優勢兼備的咖啡。</p>

Wheelys 咖啡售賣的品類以意式咖啡爲主，也有3款來自不同產地的手衝咖啡。平臺統一定價，平均25元一杯，每個運營商擁有促銷權。意式咖啡的出杯速度可控制在45秒到1分鐘，手衝咖啡2.5-3分鐘左右。Wheelys 咖啡採用無現金交易，點單支付全部通過系統完成。</p>

<strong style="border: 0px; margin: 0px; padding: 0px;">智能系統是 Wheelys 咖啡的另一大優勢</strong>。白曉帆介紹，該綜合系統連接消費者、運營商、供應鏈和平臺，分客戶端、商戶端和後臺。客戶端包括微信平臺、安卓平臺，IOS版本也將於近期正式上線。消費者可以通過手機尋找距離自己最近的 Wheelys 智能移動咖啡車，線上預約，路過自取。比如，消費者可在上班路上提前點單，取杯時間設置爲13分鐘後，系統將自動提示咖啡師11分鐘後進行製作。消費者到公司樓下可直接帶走，避免排隊。在多次下單之後，系統會越來越智能。它熟悉每個消費者的消費習慣，週一喝什麼，週五喝什麼，加糖還是少冰，消費者還可選擇一鍵下單。</p>

在商戶端，系統主要有四個功能：一是接單，二是智能化排序（告訴咖啡師先做哪一杯），三是客戶管理，四是庫存管理。所有運營商的咖啡原料爲國外進口，由平臺統一發貨。根據以往的銷量情況，系統自動判斷庫存已經到達警戒值，並提醒補貨，建議補多少貨。白曉帆表示，後續會有更智能化的測算，季節影響、用戶喜好，系統可以幫助運營商進行更好的經營決策。</p>

此外，還有一個後臺系統，可以連接供應商，供應商收到運營商的訂貨單後及時備貨、發貨；也可以連接第三方外賣平臺，運營商不需要做電子商務管理，只要接單、製作咖啡，銷售渠道由平臺負責管理。</p>

在咖啡的品控上，白曉帆認爲，流程上需要把握幾個點。首先是原料，由平臺統一負責；其次是製作，包括咖啡機和咖啡師，由於咖啡機本身也是統一的，因此重點在於咖啡師的培訓。Wheelys 有自己的培訓體系和SOP，包括線上和線下，會長期對運營人員進行持續培訓以保證咖啡口味。</p>

白曉帆表示，接下來會研發以車爲載體的非咖啡產品，如茶飲、蛋糕等，讓運營商有其他抓手可以切入輕食行業。Wheelys 希望爲這些運營商提供產品、技術、市場、供應鏈支持，幫助他們獲取客戶，優化供應鏈、支付體系、會員體系、運營策略，實現輕創業。</p>

Wheelys 咖啡在中國的運營是獨立的，但會和總部合作進行一些新業態的研發，如無人商店、可移動的無人巴士等。此前，Wheelys 已經進行了一次系統測試，但技術還需打磨，推出時間未定。</p>

根據團隊提供的信息，目前中國有18輛固定運營的咖啡車，覆蓋了7個城市，包括上海、杭州、廈門、蘇州、南京、成都、青島等，臺灣也有五六輛。接下來公司將加強在各城市的佈局，主要在北上廣深，以及主流的二線城市，計劃今年6月底新增20輛咖啡車。運營半年多，平臺訂單總量10萬單左右，運營商毛利爲75%。目前中國團隊近50人，其中技術人員佔一半以上。</p>
