最近悄然覺察到貓屎咖啡正在迅速擴張，自然讓人想到美國星巴克、臺灣上島咖啡、廣州綠茵閣、深圳老樹咖啡等等。</p>
<p>
貓屎咖啡(Kopiluwak Coffee 是由印尼椰子貓的糞便作爲原料所生產，故叫“貓屎咖啡”)登錄國內市場已經有一段時間了，總體上仍然是瞭解市場，雖然在調調上依然是最好的咖啡，卻始終看不到“最好”在哪裏？而最近一兩年內，這種所謂的“最好”讓人有點感覺了。看看價格就知道了，“最好”的標價是要268元/杯。</p>
<p>
星巴克近兩年開始戰略轉型，商標把女妖的形象進一步簡化之後，加速了擴張的步伐，據說去年一年在國內是九十多家。也在某種意義上降低了身段，增多了自營品牌的代工產品。經過戰略轉型之後的星巴克，主營單位重點選擇了香港的合作方。</p>
<p>
星巴克憑藉着霍華德.舒爾茨自己的絕對統治力，使得星巴克風生水起，全球尊貴而暢銷。他首先是規整了星巴克之前的“有點亂”，之後，把星巴克定位在了咖啡的主題下。星巴克對於國人的印象，就是位於高檔寫字樓的一間面積不大的、場所也似乎不怎麼規範的、一間幾平方米的吧檯和一些棕色的咖啡沙發，再加上幾張並不怎麼高檔的小圓桌，有的還是露天的，諸如此類。</p>
<p>
這個地址的選擇對於星巴克來說是第一生命線，這個選擇我猜想一定是與寫字樓的級別有關。因爲，在這個地方開店是咖啡價格的基礎，也是品牌尊貴的基矗在高檔寫字樓的一樓選擇一家咖啡店，那是高級商務人員的活動場所，也是有身份的人經常進出的場所。星巴克不管他賣的是什麼東西，在這裏豎個牌子本身就已經很有影響力。籍此，聰明的舒爾茨說不做廣告，其實甲級寫字樓本身就是很好的廣告載體；所謂的依賴於口碑傳播的務實作風，讓星巴克更是尊貴一等。</p>
<p>
如果說星巴克的祕密就是在高檔寫字樓開店成就的話，那麼要戰勝星巴克，就必須在更高級別的寫字樓開店或者更豪華的地方開店；亦或者是在更昂貴的地段開店。貓屎咖啡開始採取的是捆綁戰略，和一些知名的連鎖超市，如吉之島合作，這樣的效果不足以壓倒星巴克。因爲和吉之島合作的餐飲機構雖然也很高級，但是他們不足以超越星巴克。也就是說，貓屎咖啡和吉之島以及吉之島的合作伙伴們“站”在一起，找不到咖啡店的感覺。說白了，你在這樣的地方開店，永遠無法超越星巴克。</p>
<p>
當今品牌的世界，要想取得優勢，必先取得品牌優勢。其實，誰人不知，誰人不曉，星巴克也好，貓屎咖啡也罷？賣的東西都差不多，只是個場所和品牌不同而已。在這樣的認知前提下，貓屎咖啡如何憑藉着貓屎咖啡這個全球公認的“最好”咖啡這一認知事實，挑戰星巴克作爲咖啡老大的地位成爲關鍵，而在零售業態的差異化方面，星巴克顯然銷售的品類要比貓屎咖啡要多些。。</p>
<p>
從這個意義上，要戰勝星巴克，首先就要在地段上超越星巴克。貓屎咖啡以廣州爲大本營，其首先必須在廣州的重要地段上搶佔優勢地位，且相對數量上要形成消費認知優勢。貓屎咖啡除了前面提到的合作之外，就是選擇了和星巴克旗鼓相當、甚至是更有創意的位置展示自己。在中華廣場開了全國第一家店之後，體育東路等一些場所也相繼開店。</p>
<p>
有創意的是在廣州最具人氣的廣州購書中心開設了一家店。我仔細看過了該選址的門道：這原本就是廣州購書中心一樓的一部分，以前經常是各種紀念品的專賣店：向奧運會紀念牌、亞運會紀念品等等，現在卻是在正門的側面開了一家店，且和書店內部是聯通的。我認爲這是貓屎咖啡開設的最具震撼力的一家店。由於網絡購書的持續增長，實體書店的生意顯然不好過。挖牆角，可以看出貓屎咖啡的經營團隊已經進入營銷狀態，只要資金實力足夠，一定能夠首先在廣州樹立貓屎咖啡全球最好的消費認知。</p>
<p>
另一方面，星巴克顯然是在加大超市銷售的品類。這一做法與品牌定位是背道而馳的。而星巴克自營店內部的銷售品類也在增多，同時，代工的產品也在增多，這種擴張的趨勢對品牌是個陷阱。從2011年開始轉型到今天，星巴克仍然處在混沌的消費認知之中。最近，在我家樓下也開了一家星巴克。雖然，我家所在的位置並不是高檔寫字樓，而是小區；但是，星巴克是和必勝客、肯德基一起進入的；而且三家是獨佔一排樓且連在一起的。更爲有趣的是：本是一家子的必勝客和肯德基，卻爲了維護品牌，故意把小小的星巴克夾在中間，把他們兩個間隔開來。</p>
<p>
因爲從我家樓上可以看到這個位置，所以，從一開始我就去關注這家店的裝修。結果大爲意外的是不到一週就裝修好了。而且，聽裝修的師傅說，僅僅是一月份在廣州就要裝修十幾家。而他們的裝修要求極爲嚴格，且是香港專人過來指導和監督施工的。從方方面面都很講究，而且有很多門道在裏面。雖然，從外觀上看，沒有什麼不同，其實這裏有很多吸引消費的技巧。當你知道商家在使用誘導你消費的技巧的時候，也許你會反感了。具體的講：他們從方方面面，比方：畫、色、味、聞、內空間、佈局、內外銜接等等方面，特別是消費心理方面都有考慮和部署。</p>
<p>
在咖啡店的品牌塑造方面，人才是不能不提及到的。香港人在做品牌方面，確實棋高一着。不論是星巴克，還是邦美蜀，也不論是王老吉還是加多寶，成功的運營都是來自香港人。通過自家樓下星巴克的裝修，我深深的感覺到香港人對品牌的塑造有極爲精細的研究。品牌消費的體驗方面，香港寸土寸金的現實，造就了一大批香港品牌店經營的精英。</p>
<p>
咖啡是一種來自成熟於歐美國家的消費產品。在發達的國家流行開來的品牌和產品，走向全球有一種天然的優勢，這也是人自身需要的一種體現。在咖啡店選址的塑造過程中，運營商借助了當地人對當地建築的敬仰和熟知的認知度，成功的把自己的品牌店植入地標性建築之中，從而間接植入消費者的心中，也就是定位理論所說的消費者的心智之中。</p>
<p>
這顯然是一種捷徑，這種捷徑來源於與廣告的投入比例的效果。也就是說，在高端寫字樓開設門店實際上是區別於媒體廣告的一種品牌做法。我相信，這種效果要比一味的“不知道另外一半廣告費投入到哪裏去了”的思想務實的多。從一座城來說，也就是對於這個城市的消費者來說，在全城最具地標性的建築的位置上開店是定位的最佳效果區域，也就相當於在電視等傳統媒體最佳時間段做廣告。與媒體廣告不同的是，地標位置開店在一座城市需要一定的數量來協同效應。一個是最佳時間表現法；另一個就是最佳空間位置表現法。</p>
<p>
咖啡成爲門店消費的代名詞，這是品牌塑造的成功之處。一個快消品的品類、門店、品牌相互交融在一起。星巴克目前是咖啡的代名詞，也是咖啡店的代名詞，這是事實。如果邦美蜀想要在這方面有所斬獲，星巴克必須成爲其征服的對象，這是品牌的認知之戰、也是門店選址之戰、未來還是門店數量之戰。</p>
