直接倒入成形法是咖啡拉花技巧中最困難的方式。因爲這種方式必須注意各種細節,從espresso的狀態、牛奶發泡的方式與組織細緻程度,到兩者融合方式的技巧,再加上直接倒入成型法,拉花圖案成形的時間是十分短暫的,所以還需要非常流暢而且有節奏的動作和迅速精確的手部晃動技術,而大部分人就會因爲沒有辦法達到這些要求而退卻,因此想要成爲真正的咖啡拉花高手,就要不斷地認真練習哦!</div>

手繪圖形法</div>

就是在已經完成espresso與牛奶、奶泡融合的咖啡上,利用融合時產生的白色圓點或不規則圖形,使用牙籤或針狀物,沾用可可粉或巧克力等醬料,在咖啡表面勾畫出各種圖形。其圖形大部分可分爲兩種,一種爲規則的幾何圖形,多是使用各種顏色的醬料在完成融合的咖啡表面上,先畫出基本的線條,再利用牙籤或針狀物勾畫出各種規則的幾何圖形。另一種爲具象的圖案,例如,人像、貓、狗、熊貓等動物圖形其原理十分簡單,一般來說分爲兩種表現方式,第一種方式就是在牛奶做完發泡動作後,先靜置約30秒左右讓牛奶跟奶泡產生一定程度的分離效果,然後利用湯勺先擋住部分的奶泡,讓牛奶跟espresso先行融合,再使用湯勺將奶泡覆蓋在咖啡表層形成雪白狀的表面,之後利用刻有各種圖形或字樣的網版或篩網,放置於距離咖啡表面約1cm處,撒上可可粉或肉桂粉在各式網版及篩網上,使咖啡表面呈現各種圖形或字樣<br />

1、選點,在載有Espresso的咖啡杯中,選擇中心點注入;</div>

2、流量,控制較小的流量,迅速注入,不要破壞油脂;</div>

3、上移,小流量注入後,向上移動,不要接觸咖啡杯內壁;</div>

4、加大,小流量控制上移至“杯口”時,加大流量形成“對流”;</div>

5、保持,加大的流量左右搖晃拉花缸,手臂手腕配合;</div>
<div>
6、擺幅,搖晃時爲1CM爲宜,邊搖晃邊後退;</div>

7、收尾,提高拉花缸,小流量一條直線收尾</div>
