在過去三十多年中，有許多全球知名跨國巨頭來到中國市場。在華“淘金”的同時，這些當仁不讓的老大們也直接或間接地成爲了本土企業的老師，不僅帶來了知識、技術，還有豐富成熟的管理經驗和理念。</p>
<p>
然而，三十年河東，三十年河西。彼時只能充當追隨者的本土企業，隨着信息的豐富、視野的擴大、技術的熟練及本土消費市場進一步成熟，其角色也開始轉變。2012年，一些原本處在產業鏈末端的中國企業鬧起了“革命”：一邊廂，全球最大連鎖家居用品零售商宜家(IKEA)在華代工廠因不滿被壓榨利潤而集體倒戈；另一邊廂，雲南咖啡農則因雀巢、星巴克等國際咖啡巨頭給出的咖啡豆收購價一跌再跌，也欲自立門戶奪取市場定價權。再放眼被麥當勞、肯德基等洋巨頭盤踞多時的快餐市場，也早已有真功夫、永和豆漿、大娘水餃等中式快餐與之分庭抗禮。</p>
<p>
事實上，2011年美國波士頓諮詢公司發佈的《新全球挑戰者》報告顯示，在全球100家最有可能挑戰老牌跨國公司的發展中國家企業中，中國企業佔到了33席，數量位居第一。可以想見，這場由本土企業向洋老師們掀起的“屌絲逆襲”風潮，只是剛剛開始。</p>
<p>
宜家中國代工廠集體倒戈</p>
<p>
黑龍江省耐力木業集團，前宜家百葉窗簾的供應商；黑龍江省綏化市慶安厚成木業有限公司，前宜家階梯凳供應商；伊春友好華麗木業，前宜家拉伸餐桌供應商……2012年，這些曾經依賴給宜家代工而迅速壯大起來的工廠，抱團高調宣佈將以“叛將”的身份向宜家發起挑戰，推出“翻版宜家”嘉宜美家居連鎖商超。</p>
<p>
反抗始於利潤被壓榨</p>
<p>
按耐力集團董事局主席、前宜家供應商聯盟會長曹躍偉的說法，選擇叛逃主要因爲長期受到“成本殺手”宜家的壓榨。</p>
<p>
事實上，代工的合作方式在最初的確是雙贏。代工廠不僅業務量猛增，在宜家的嚴格監控下，工廠的技術和品控也有所發展。但去年以來，由於歐債危機持續發酵、人民幣對內貶值以及原材料成本上升等因素，代工廠的微薄利潤很快被侵蝕掉，而來自宜家方面的降價壓力卻沒變。</p>
<p>
以耐力木業爲例，從1997年到2011年的近15年間，宜家對耐力木業其中一款的窗簾採購價從每平方米10美元降到了8美元，原料僅在2010年就上漲了四成。不少有同樣遭遇的代工廠們自發組成宜家供應商聯盟，與宜家溝通，希望能將採購價提高5%，但始終未獲同意。</p>
<p>
採購價提不上去，做了也沒利潤。在2011年年初，曹躍偉一怒之下結束與宜家長達16年的合作。</p>
<p>
從複製到開拓電商平臺</p>
<p>
嘉宜美成立的初衷是複製宜家。“由於我們自己就是代工廠出身，對成本非常瞭解，所以每款價格都比宜家略低。”一位嘉宜美的相關負責人告訴羊城晚報記者。</p>
<p>
但這一方向目前已有所調整。去年“雙十一”期間，電商瘋狂促銷讓原本消費疲軟的家居市場大放異彩，在六家銷售額一天內過億的企業中就有一家是傢俱企業。這也讓嘉宜美開始思考從單純的複製宜家，轉向線上線下業務雙結合。</p>
<p>
“我們正和天貓談線上合作。”嘉宜美一位負責人透露，未來一年內將在全國開200到300家體驗店，約有500平方米作爲產品展示，銷售可以在線上完成。藉助曾經宜家“叛將”的名聲，嘉宜美的品牌得到一定程度的認可，但已和原有的宜家模式相去甚遠。</p>
<p>
宜家模式真能簡單複製？</p>
<p>
面對嘉宜美髮起的挑戰，去年10月宜家中國區零售總裁吉麗安曾向媒體如此表述自己對其“複製宜家”的看法：“當我們看到整個商場甚至產品系列都在試圖拷貝宜家時，心裏面還是有點高興的，這說明我們做得不錯。”</p>
<p>
但宜家模式真的那麼簡單就能複製嗎？事實上，早在嘉宜美之前，已有不少家居賣場在模仿宜家，如昆明的“十一傢俱”、廣州的百世家居等。單從產品構成、賣場佈局甚至外觀，看起來都像足宜家。但《深圳傢俱》特約評論員蔣健認爲，“學習宜家模式，不在於看上去和宜家有多麼相似，真正精髓是對消費者家居購物心理的研究，對上下游產業鏈運營的把控，以及產品服務系統的建設”。</p>
<p>
一句話，宜家始終知道消費者是誰，需要什麼，能承受什麼樣的價格，但這些經驗並非僅靠多年簡單代工就能學習到的。“國內家居廠商與賣場的思維還停留在"地主模式"爲主，這決定他們雖然關心渠道，但並不關心消費者需求什麼。而脫離消費者價值的商業模式必將面臨嚴峻挑戰。”蔣健說。</p>
<p>
雲南咖啡自立門戶欲奪定價權</p>
<p>
從5年前的39萬畝到2012年的130萬畝，飛速擴張的雲南咖啡種植業在去年遭遇市場寒流。先是在去年年初，國際巨頭雀巢宣佈停止收購後引發咖農恐慌拋售的“滯銷風波”。去年年底，咖啡豆收購價跌至5年來新低，逼近種植成本線。羊城晚報記者連日來在雲南調查發現，在諸多挑戰之下，雲南咖啡正在醞釀一場逆襲風暴。</p>
<p>
收購價跌近成本線咖農觀望</p>
<p>
目前，原豆種植佔國內行業的98%以上份額的雲南省正迎來咖啡採收季。但咖農們怎麼也高興不起來。</p>
<p>
普洱市大林窩咖啡合作社的負責人告訴羊城晚報記者，該社目前種植面積近500畝，產品的主要買家雀巢和星巴克的報價較低，咖農現在還在觀望。而現在的農藥和化肥價格持續上漲，種植成本已經接近16元/公斤，如果價格繼續走低，咖農或將選擇其他出路。而在普洱市西盟縣，一位村幹部告訴記者，由於近年來咖啡行情看漲，村裏近200畝的田地在5年前被改種成了咖啡，去年是咖啡樹開始結果的第二年，咖農的積極性受挫。</p>
<p>
雲南省咖啡行業協會副祕書長鬍路表示，目前租用土地的種植成本在15-16元/公斤左右，如果跌破這一價格，將嚴重打擊雲南咖啡產業。</p>
<p>
雲南咖啡欲逆襲爭奪定價權</p>
<p>
記者調查發現，目前雀巢的定價是參照最新的紐約咖啡期貨價格，並下調幾美分來制定，分散的咖農沒有話語權。</p>
<p>
“價格參照紐約咖啡交易所，只是普通咖啡豆的價格，對我們非常不公平。”普洱市副市長彭遠國日前在接受羊城晚報記者專訪時表示，普洱市目前正致力於打造本土咖啡品牌，計劃扶持一批有定價權的大型企業，形成全產業鏈。並計劃制定產業技術規程和標準，申請原產地保護，力求奪回國際定價權。</p>
<p>
當地最大的咖企後谷咖啡曾是雀巢在中國最大的原料供應商，近年來開始自立門戶，走深加工、產業鏈化之路全力打造自主品牌。董事長熊相入表示，如果國際買家的收購價跌破成本價，將啓動保護價收儲，幫助咖農渡過難關。</p>
<p>
咖啡巨頭改變策略應對</p>
<p>
面對本土合作者的挑戰，有“洋老師”已開始改變原來簡單的採購策略，加強與本土企業合作。星巴克向記者透露，該公司在三年前引進了四個咖啡新品種進行適應性試驗，在五年試驗期滿後，將會大規模種植這四種咖啡品種，屆時其全球首個咖啡種植基地將落戶雲南，其設在普洱的亞洲首個咖啡種植者支持中心已在近日投入運營。</p>
<p>
事實上，面對雲南本土企業的崛起，星巴克已經在改變策略。其與普洱最大的本土咖啡企業愛伲集團的合資公司已於去年12月正式投入運營，合資公司旗下的咖啡初加工工廠年產能可達2萬噸生豆。 記者 劉勇</p>
<p>
中式快餐與洋快餐分庭抗禮</p>
<p>
本土企業向洋巨頭髮起的逆襲在快餐業似乎來得更早些。儘管當下國內快餐市場仍是麥當勞、肯德基等洋巨頭的天下，但不難發現，近年來中式快餐早已從原來山寨式模仿的“土學生”，搖身變成了挑戰者，而且隊伍也越來越壯大。</p>
<p>
事實上，近年來一些食品安全事件中不乏洋快餐的身影，也使得一些消費者開始投入中式快餐的陣營。</p>
<p>
從山寨模仿到正面挑戰</p>
<p>
隨着麥當勞、肯德基在上世紀八九十年代陸續進入中國市場，其在俘虜了國人的胃口時，也引發了衆多追隨者。各種類似的“肯特基”、“肯德香”、“麥噹噹”等有山寨之嫌的小店也如春筍般遍地開花。</p>
<p>
不過，也有不甘心山寨式模仿的本土企業開始潛心學習。1997年，在廣東起家的真功夫成功自主研發電腦程控蒸汽櫃，率先攻克中餐標準化難題。隨後，各地都湧現出越來越多的中式快餐連鎖品牌。</p>
<p>
據不完全統計，目前真功夫門店已有超過450家店；“永和豆漿”餐飲門店全國有近500家；西南地區快餐業一哥“鄉村基”現已擁有直營連鎖餐廳200餘家，並於2010年成爲首家在美國上市的中國快餐連鎖企業；安徽省最大連鎖快餐企業“老鄉雞”已有219家餐廳；1996年4月創建於常州的大娘水餃，如今在南京、上海、北京等上百個城市也開設了連鎖店300餘家。</p>
<p>
洋快餐光環逐漸消散</p>
<p>
一直以來，洋快餐吸引大量中國消費者的重要原因之一，是消費者對其品牌影響力之下食品安全的預期。然而，近年一些食品安全事件中並不乏洋快餐的身影。如近期仍在發酵的“速成雞”事件，就將肯德基等洋快餐品牌捲入了輿論的漩渦。</p>
<p>
而中式快餐卻趁機高歌猛進。如安徽省最大的連鎖快餐企業“老鄉雞”，據稱其由於主打企業自己養殖的土雞產品，在“速成雞”事件發生後銷售出現明顯增幅。據瞭解，目前在中國的洋快餐品牌由於擴張迅速，其雞肉原料幾乎全是向外採購，完全沒有自養的模式。也許在某種程度上，曾經是“學徒”的中式快餐企業，如今已經可以爲“洋老師”提供一些借鑑意義。</p>
