	今年3月，記者接到線索稱，部分咖啡店衛生狀況不好，存在茶具不按規定消毒的情況。</p>

	記者前往位於西單君太百貨的COSTA應聘兼職吧員。這家咖啡店位於君太百貨的二樓和三樓，二樓是吧檯、就餐區、操作間，三樓則是就餐區。</p>

	面試時，主管問過一些是否有健康證、薪金待遇要求等，便讓記者幾天後去公司辦理入職。</p>

	記者發現，由於該店地處西單商圈黃金位置，加上是全球知名連鎖品牌，一到下午就會客流爆滿，常會出現等位子的情況。附近一些大公司的員工、來西單逛街的時尚人士是其主要消費人羣。</p>

	按照店裏分配的任務，記者主要負責將顧客用過的餐具送回操作間。在這個過程中記者發現，有工作人員不遵守咖啡店規則。</p>

	<strong>操作間祕密1餐盤清潔池員工洗頭髮</strong></p>

	對工作人員個人衛生要求嚴格是COSTA給記者的第一印象，在其咖啡師核心技能手冊中，此類規定很細緻，包括工作前要洗澡、不留長指甲等。</p>

	4月17日下午2時許，記者收拾完顧客用過的餐具，從就餐區返回操作間時，發現一名工作人員換好黑色工作服後，從自己的個人物品櫃裏取出一個飄柔洗髮水瓶，來到清潔餐具的水池前面。</p>
<p style="margin: 0px 0px 29px; padding: 0px; font-size: 16px; line-height: 28px; color: rgb(0, 0, 0); font-family: 宋體, Arial, sans-serif; text-indent: 2em;">
	隨後，這名工作人員挽起袖口，打開平時用於清潔盤子的水龍頭，將腦袋伸在水龍頭底下衝溼，然後從瓶子中擠出一些液體塗抹到頭髮上進行揉搓，直至出現泡沫，隨後又對頭髮進行沖洗，整個過程持續了約2分鐘。<span style="font-size: 16px; line-height: 28px; text-indent: 2em;">在這名工作人員洗頭的過程中，水池裏還堆放着顧客用過的盤子，混雜着洗髮水的水直接沖洗着這些餐具。</span></p>

	記者發現，此時清潔池旁邊還有三名工作人員正在說笑，他們並沒有對那名工作人員的洗頭舉動進行勸阻，也沒有任何反應。<br />

	在COSTA君太店操作間裏，清潔餐具都有專用的池子，並標註着&ldquo;瓷碗&rdquo;、&ldquo;盤子&rdquo;字樣，除了清潔餐具池外，還有專門用於涮墩布的池子。</p>

	5月17日，一名要清潔二樓地面的工作人員拿着墩布來清潔，看到墩布池前放着其他東西不方便，就將墩布放進了洗瓷碗的池子來回涮洗。</p>

	記者發現，池子中不但堆放着顧客用過的瓷碗，上方還標有&ldquo;瓷碗&rdquo;字樣，以警示工作人員池子的用途，但是這些並沒有阻止他在裏面涮墩布。</p>

	<strong>操作間祕密3客流高峯期茶壺沒消毒</strong></p>

	記者在暗訪中發現，瓷碗、盤子在清潔池清洗後，會放進洗碗機高溫消毒，但用過的茶壺並不立即進行清潔消毒，而是存放在操作間的一個大垃圾桶旁邊。</p>

	4月11日下午2時許，記者發現，店內前一天清洗消毒過的乾淨茶壺已經用完，這時再有人點茶壺飲品，工作人員就會跑到操作間取一個用過的茶壺，用清水沖洗一下，就拿到吧檯給下一個顧客使用。</p>

	一名正在給記者講如何給客人找座的工作人員說，其實茶壺也需要過機（進行高溫消毒），但中午下午客流量大，沒有人專門來消毒，在顧客點單需要茶壺時，只能趕緊拿到清潔水池沖洗繼續使用，況且，&ldquo;沒有顧客會直接對着壺嘴進行飲用。&rdquo;</p>

	這名工作人員還提醒記者，這種茶壺特別容易碎，千萬別扎着手。</p>

	<strong>糕點櫃內發現死蒼蠅</strong></p>

	COSTA規定，所有食品儲藏處都不得有害蟲，因爲害蟲都攜帶細菌和疾病，這些都可能傳播到食物中並引發嚴重疾病。</p>

	4月6日中午，糕點冷藏櫃底層的玻璃瓶裝飲料旁邊發現一隻死蒼蠅，一名工作人員手戴塑料手套，用紙巾將蒼蠅捏出，然後放進垃圾箱內。</p>

	《食品安全法》第四章食品生產經營第二十七條第四項規定：具有合理的設備佈局和工藝流程，防止待加工食品與直接入口食品、原料與成品交叉污染，避免食品接觸有毒物、不潔物。</p>

	記者發現，糕點櫃門爲左右推拉式，糕點櫃放在一個開放的環境下，當工作人員給顧客選取糕點時會將糕點櫃門拉開，如果不注意，蒼蠅很容易飛進去。此時，需要工作人員縮短開關糕點櫃門的時間，並且給顧客拿取糕點時，要注意防止飛蟲飛到糕點櫃內。</p>

	今天上午，北京華倫律師事務所繆蒙京律師接受本報採訪時表示，我國對餐飲業廚房、操作間衛生有細化規定。</p>

	我國《食品安全法》第四章食品生產經營二十七條第八項規定：食品生產經營人員應當保持個人衛生，生產經營食品時，應當將手洗淨，穿戴清潔的工作衣、帽；銷售無包裝的直接入口食品時，應當使用無毒、清潔的售貨工具。</p>

	一名長期在衛生執法一線工作的人員表示，按照現行衛生部門規定，餐飲企業的操作間內，個人物品及行爲要與食品加工及操作分開。</p>
