在楓涇古鎮景區裏，一家“半塘咖啡”受到不少觀光客的歡迎。</p>

楓涇本地青年、店主車健告訴我們，“半塘咖啡”是楓涇古鎮上的第一家咖啡店。而在這之前，很多人都感嘆，楓涇古鎮怎麼能沒有一家咖啡店呢？“在古鎮裏走累了，玩累了，有個可以坐下來聊聊天、喝咖啡的地方真的不錯。”</p>

有文化的咖啡小店</p>

“半塘咖啡”並不大，只有近30個平方。店內空間雖然緊湊，但簡單雅緻的裝修，木架格上擺放的書本也給人一種舒適感。“半塘咖啡”就開在古鎮文中路的長廊區，若是覺得室內空間小，店外的長廊裏還可以容納兩桌人。長廊緊挨着古鎮的半塘河，臨河而坐，既能品咖啡，又能看風景，天氣好的話，還能曬太陽……</p>

“作爲一個小青年，怎麼會想起開咖啡店呢？”我們問道。車健告訴我們，2011年時，他剛從上海市區的一家國企跳槽後就有了創業的想法。一次，他和朋友在一家咖啡館喝咖啡，在和老闆的交流中，慢慢地喜歡上了咖啡。“一開始喜歡意式咖啡，從不懂到懂，後來又接觸到了手衝咖啡，就真的喜歡上了咖啡。”</p>
<p style="padding: 14px 0px 0px; margin: 0px auto;">
“店名爲何叫半塘？”車健說，“半塘”一詞有兩層含義，一是咖啡店邊的景區河道叫半塘河，二是取自《楓溪竹枝詞》的開篇第一首——“天目來源一水長，玉虛高觀峙中央。界橋兩岸分南北，半隸茸城半魏塘。”</p>

這麼聽下來，頓時覺得這一方小小咖啡店也好有文化。說話間，車健已經從吧檯端出了兩杯熱氣騰騰的咖啡——</p>

“嚐嚐，這豆子是來自巴拿馬艾力達莊園的咖啡豆。剛開始有些苦，但多喝幾口就能嚐到它有一點葡萄酒的水果調性在裏面……”</p>

獲得歐洲認證的咖啡師</p>

接觸咖啡六年來，車健對咖啡豆已經到了癡迷的程度。“每一種豆子風味不一樣，酸度、甜感、水的溫度等參數都會不一樣。正是這些不可控的因素會影響咖啡的味道，所以每次衝都有變化，這也是好玩的地方……”</p>

“好的豆子一喝就能感覺不一樣，所以我希望把更多好豆子呈現給客人。”車健說，在這個過程中，他不斷充實自己的咖啡記憶庫。在去外國旅遊時，車健首先關心的也是這個地方產什麼咖啡豆。“我們店裏做拿鐵的豆子來自埃塞俄比亞和危地馬拉兩個產地，經過咖啡工作室的烘焙後，口味上有點小清新，各個年齡段的朋友都能接受……”</p>

對咖啡豆的癡迷，對手衝咖啡的執着，這個年輕的咖啡師在這兩年還拿到了歐洲精品咖啡師協會的認證。去年，車健帶着“艾力達”的咖啡豆闖進了世界咖啡衝煮大賽中國區選拔賽上海分賽區的前9名。</p>

值得一提的是，“半塘咖啡”爲了保證咖啡豆的新鮮度，每個月只會購進約10公斤咖啡豆。“多出來的咖啡豆，我們也不會再賣給顧客，我們自己拿來練習咖啡技藝。”</p>

一杯咖啡溫暖一座小鎮</p>

“半塘咖啡”在古鎮營業已近4年。4年裏，“半塘咖啡”用一杯杯咖啡溫暖了這座旅遊小鎮。不少顧客甚至因爲一杯咖啡和車健成了好友。</p>
<p style="padding: 14px 0px 0px; margin: 0px auto;">
“一對來自上海市區的老夫婦很愛喝咖啡，第一年他們來楓涇時在古鎮上找半天沒找到喝咖啡的地方，老人很失落，直到找到我這裏他們一下子開心了起來。老人也懂咖啡，他會問你用的是什麼咖啡豆，當然，我們更多聊天是相互問候，讓老人感受到溫暖。”現在，這對老夫妻每年節假日都會來楓涇幾次，每次都會到“半塘咖啡”來喝咖啡。</p>

“曾有一位老太太無意中走進店內，詢問是否有澳洲的咖啡，交談後才知道，老人的兒子在澳洲，每次回來都會給她帶點咖啡回來。但是兒子近期工作繁忙，回來的少了，喝不到咖啡的老太太有些失落。所以，我免費爲她提供了一杯咖啡，因爲她分享了自己的故事。”</p>

在接觸咖啡這行之前，車健是一個宅男，而開了“半塘咖啡”後，他開始接觸到形形色色的顧客，就是在與不同人的接觸中，車健開始變得外向起來。他說，咖啡店就是一個與人交流的平臺，咖啡師就應當與人交流。</p>

“有的老顧客說以前到楓涇沒有地方喝咖啡會很失落，現在有了這個地方，會讓人覺得心有一處落腳的地方。一坐下來就是一個下午，喝了一杯不夠再來第二杯第三杯……”</p>

這兩年，隨着楓涇古鎮旅遊業態的不斷升級，一家“星巴克”咖啡和另外兩家個體咖啡店相繼在古鎮上開業。和他們相比，車健依然在堅守一些東西。他說：“我只賣咖啡和一些茶水，價格也是古鎮裏最便宜的。做咖啡，就是讓顧客享受到咖啡的純粹。”</p>
