到海南旅遊就不能錯過興隆咖啡，歸僑們不但把喝咖啡的傳統和製作、沖泡咖啡的手藝帶到海南興隆，還生產出聲名遠揚的興隆咖啡。</p>
<p>
興隆咖啡落戶於興隆，是在1953年，當時興隆農場剛剛成立不久，爲了實現“以短養長”的做法，也就是用咖啡、香茅、水稻等短期作物收入來彌補橡膠等長期作物收入，興隆從澄邁福山開始引進咖啡種植。</p>
<p>
經過長時間的研究，人們發現，咖啡的大粒種雖然高產，但品質口感差;小粒種雖然口味極佳，可其生長環境爲高原氣候，興隆海拔很低，種植小粒種不但產量低，而且樹的壽命也不長。最後，他們把中粒種咖啡作爲最適合興隆栽培的品種開始大面積種植，興隆的海拔、緯度和氣候，爲中粒種咖啡的落戶提供了很好的保證。</p>
<p>
當時咖啡的種植面積非常大，整個興隆有3000多畝。爲了保證 咖啡豆的品質， 咖啡豆都是熟一粒，摘一粒，當時工人太忙，農場的學生經常半天半天的來到種植園裏摘咖啡。上世紀90年代後，隨着咖啡豆價格的不斷下跌，興隆咖啡的種植面積也在不斷減少，到現在，興隆地區的咖啡種植面積已不足千畝。</p>
<p>
興隆的炒制技術是採用東南亞的方法，興隆這種本土咖啡最適合這樣炒制方法，在炒制過程中，不但要掌握火候，而且還要適時地加上白糖、食鹽和牛油，這樣的咖啡格外香濃.</p>
<p>
“興隆咖啡是世界一流的，我喝過許多外國咖啡，還是我們自己種的咖啡好喝。”1960年2月7日，周恩來總理到興隆農場視察，喝過興隆咖啡後大爲讚賞。一杯香味濃郁的咖啡，一位和藹可親的總理，爲興隆咖啡寫下了一段美名。</p>
<p>
炒咖啡香味濃烈，椰奶咖啡口味獨特，興隆有的景點還現場炒制，使遊客在品嚐最新鮮的咖啡同時，瞭解其製作過程。然而優質的咖啡，優秀的炒制技術，卻未能真正使興隆咖啡發揚光大，時至今日這在許多興隆人的心裏是一塊永遠的痛。</p>
