磨咖啡豆的訣竅
咖啡粉咖啡豆的研磨道具是磨子。磨子從家庭用的手動式到業務用大的電動式種類多不勝枚舉。家用磨子也可當裝飾品,而人數多要一次研磨的話,還是電動式來得便利。
以磨子的構造來分類有使用縱橫溝刃邊切咖啡豆邊研磨的磨子與以臼齒將咖啡磨潰打碎而研磨的磨子。各有所長,而業務用的情況是趨於大量生產的電動式爲主流。
然而研磨咖啡豆最應注意的是以下二點:
①摩擦熱抑制到最小的限度。(因發熱會使芳香成份飛散)
②粒的大小均一與否。(顆粒不齊,沖泡出的濃度會不均勻)
以此作考量,徜若是家庭用的磨子,手動式的話要輕輕地旋轉,注意儘可能使其不產生摩擦熱。所以使用電動式磨子較爲適當。
磨子的使用方法
要衝泡前再磨豆
家庭用磨子有手動式與電動式二種類。人數少的話用手動式,而量多的話用電動式較爲便利。
配合抽泡器具而決定研磨方法(顆粒的大小)
手動式磨子要注意不要僅其產生摩擦熱。而且要注意是否摻雜其他東西。
研磨後的咖啡豆顆粒大上整齊與否,要檢查一下。(顆粒不齊的情況有可能磨子的機能有總是,或咖啡烘焙不勻稱等原因)
咖啡的研磨
咖啡粉在中東地區,人們還是用搗碎的方法來把豆子敲成大小不一的顆粒,但在大多數的人已逐漸使用磨豆機的時候,貝拉一沙瓦林親自做了個實驗,是搗碎的好喝還是研磨較佳,同爲求公信,並同時請了美食監賞家品嚐這兩種咖啡,最後大家都認爲搗碎了的咖啡粉比研磨的咖啡更爲令人着迷。
要磨出讓人滿意的咖啡粉,真的很簡單,只要多嘗試幾次,找出自己最喜歡的風味,其實沒有一定的標準。但大致上來說,磨的太細的咖啡粉(powerdered)香氣很容易跑掉,比較適合現磨現喝。
往上一級的咖啡細粉(veryfine)是使用電動咖啡壺時用的,這是因爲細的咖啡粉衝出來的咖啡比較多,通用公司行號,或餐廳的附餐飲料多用這一種。
接下來是細粒(fine),它的大小約像砂糖般的粗細,滴水式的煮法就很適合用這一類的粗細。
中等(medium),顆粒咖啡粉在沖泡時的份量不多,得多放些咖啡粒纔行,也因此煮出來的咖啡較爲香濃,有些咖啡壺也要用中等的咖啡粉,因爲太細的粉末會掉進篩盤裏,但是壺裏的水需要10分鐘以上才能煮好一壺咖啡且份量不多,可說是最不經濟的顆粒。
磨豆的機器有很多種,其中最普遍的是家庭用的電動磨豆機,可磨出各種不同粗細大小的顆粒,體積小又輕便,價格也不很貴,是家庭或人少時很好的選擇。
手動式磨豆機就是那種擺在咖啡店,看起來古古的,很詩情畫意的那一種,就算不拿來磨豆當做擺飾用也很漂亮,只是這一款磨豆機所磨出來的顆粒比較大,還有速度也比較慢。
咖啡店用的專業電動磨豆機可以磨出多種不同粗細的顆粒,速度快,份量多是這種磨豆機的優點。
很多新款的Espresso咖啡機都附合磨豆功能,但風險是它不一定能夠滿足你的要求,如何取捨,全看消費者的選擇。
Espreeso使用氣壓式沖泡,全部過程只需20-25秒,在這麼短的時間,啡咖精華能否適度萃取,粉粒的粗細便極爲重要。粉粒過細,蒸氣穿透的面積相對變大,會造成過度萃取,濃而不香。太粗的夥粒,阻力小,咖啡變成稀淡,creme成橘色。所以購買磨豆機要以有微調功能爲佳。便宜的磨豆機構造像家用多功能攪拌機,刀片呈風車狀,研磨後的豆子形狀方正,不利萃取。使用圓鋸片式機器,豆子會成不規則狀,觸水面廣,雖然單價較高,但仍值得。
