一,何爲養豆</p>
<p>
其實咖啡烘完出爐,味道已經木已成舟,味道已經定下來了,要說風味好壞還有多少變化,也就是前三天咖啡豆中的烘焙的煙火味道吐乾淨。後面幾天的的確確有變化,因爲其中的二氧化碳沒有排完全,二氧化碳雖然阻礙風味揮發,其實也在保留風味。如果說養豆真的養得出個花,粉磨完多放一分鐘,悶蒸時間加長一點就好了。不謝</p>
<p>
當然真正的養豆是養生豆。咖啡生豆從採摘到處理到出關,咖啡生豆本身水分並不穩定,自身還需要在某個溫度溼度下放置段時間。讓水分穩定,讓水活性保留在一個0.55-0.6之間,這樣能更好的保存芳香物質,也更容易在烘焙中展現風味。</p>

二,萬能的萃取?</p>
<p>
自從有了金盃萃取準則,媽媽再也不用擔心我做不好咖啡了。</p>
<p>
但是製作之前的咖啡風味已經決定了90%,假如一定要在萃取上下功夫鑽研,更多感覺就有敲骨食髓之嫌。萃取能把風味儘可能全面展現出來,但是畢竟還是熱水和咖啡豆發生反應,一加一不管怎麼樣都不可能等於三,要是說萃取做好了就萬事大吉了,難免給人感覺是以偏概全。烘不出就做不出。當然咖啡沖毀,把咖啡衝得如同功夫茶一樣也大有人在,咖啡製作有一定的學問。但是學問本身不能讓人一葉障目,不見泰山。</p>

三,淺烘比深烘要好喝?</p>
<p>
在寫這段話之前,我正好手上有好幾包放了一個多月了的深烘豆,確切來說,這幾包豆子已經有些哈喇子的味道出現,衝出來的確不夠愉悅。但是這個畢竟放置一個月了。一個月內味道並沒有問題。</p>
<p>
但是這個並不是淺烘比深烘要好的理由,風味流失變壞不僅僅存在深烘,淺烘澀味沒取出,有夾生也屢見不鮮。一份試卷60分及格,90分優秀,期間的浮動區間很大,如果單獨以咖啡風味,中度烘焙爲評判標準,怕是生豆和處理法不答應了。</p>

1,豆子大小</p>
<p>
除了瑰夏之外,其餘咖啡豆從小到大最適合的度數就是由淺到深。大豆子烘淺興許味道不錯,但是並沒有完全釋放,這個時候如果說只要咖啡好喝就好,當然無可厚非了,但是好喝能否禁得住比對?</p>
<p>
2,種植環境與處理法</p>
<p>
有句話說得好:清水出芙蓉,深海出蛟龍。豆子在生長環境和處理法的影響下其實已經決定了烘焙度。日曬巴西(大部分)因爲其低海拔,缺水的因素,所以豆子不大,需要靠日曬法去彌補風味,而日曬法讓風味保留在豆表,如果烘深怕是外焦裏嫩,不雅觀,更不好喝。高海拔的日曬耶佳亦是如此。而傳統的一些咖啡產地如危地馬拉,哥斯達黎加,肯尼亞這些咖啡豆自身條件就好,高海拔又不缺水,豆子自身顆粒大硬度高。豆子靠水洗髮酵的乾淨明亮的味道,以及巧克力,堅果之類的味道需要大火力來引誘其出來。如果一味講究光細若遊絲的酸味,難免有暴殄天物的嫌疑。</p>
<p>
3,烘焙手法</p>
<p>
想想還是說一下這個,畢竟前面講了那麼多,到最後都是爲烘焙做鋪墊。對豆子本身而言,其實手法節奏不同,出來結果也不盡相同。而多一點時間出來的轉化和味道可能就天差地別。如果真的沒有類似概念,完全可以去兩家店買同產地咖啡豆比對。</p>

<p>
寫到這裏總應該點題點一下,許多人對杯中之物的認識,其實少之又少,這個時候遇上好喝,風味,流行就開始迷惘了,當然話不能這麼說,不過能有耐心看到這一段話的人如果還沒有惱羞成怒,多半也應該明白,作爲愛好者,我們應該儘量拓寬自己的信息渠道,有自己的體系,興許這樣能更好的瞭解咖啡。</p>
