因爲咖啡豆被烘焙後體內含有被壓縮的二氧化碳氣體,這邊氣體會從豆子內部逐漸跑出來,會讓豆子膨脹,所以袋子的袋面會有一個單向透氣閥,裏面的氣體可以通過單向透氣閥出去,而外面的進不來,每次取完全豆子,把袋子的自封口捏緊,擠壓掉袋子裏面的氣體,因爲二氧化碳的密度比空氣大,所以會沉在下面,這樣擠壓可以讓內部的氧含量會降低很多,有利於咖啡豆的儲存。</span><br/>

真空罐可以隔絕外部空氣,但是大多數也是使用了透明材質,所以還是很容易受到光照的影響,而且每次打開關上,都會進入空氣,然後再抽氣,將裏面的空氣排出,變成一個低氧狀態,但同時它也形成低壓的狀態,豆子內部的壓力不變,內外的壓差就增大了,接近一個大氣壓,這樣的會讓豆子內部的小分子,易揮發的香氣物質會加速流失。</span><br/>
