關於咖啡拉花的起源,沒人知道它的發源地是哪兒,也一直都沒有十分明確的文獻,只知道它從意大利開始,但在美國達到頂峯。當時在歐美國家,咖啡拉花都是在咖啡表演時所展現的高難度專業技術,而如此的創新技巧所展現的高難度技術,大大震撼了當時的咖啡業界,所有人都深深被製作那漂亮的牛奶花時神奇而絢麗的技巧所吸引,從一開始就得到了大衆的注目。所到之處無不引起飲者驚歎拿起相機,相信無數年輕人是因爲着迷於拉花藝術而開始的專業咖啡學習。是不是很好奇上圖中白色的牛奶是怎樣一層層推疊在棕褐色的咖啡上的?下面就再次請出世界上粉絲最多的咖啡師德國大叔Dritan Alsela給我們慢放演示你平時最常看到的拉花圖案是怎麼做出來的。</p>

其實很簡單,只靠一雙巧手。而要能穩定地出品這樣的一杯杯高品質拉花拿鐵,背後則是咖啡師經年累月不斷的磨練和傾心製作。過去的咖啡拉花注重的大部份都是圖案的呈獻,但經過了長久的發展和演進,咖啡拉花不只在視覺上講究,在牛奶的綿密口感與融合的方式與技巧也一直不斷的改進,進而在整體味道的呈現,達到所謂的色、香、味俱全的境界。現在歐美國家和日本有許多專業咖啡書籍都在介紹Latte Art的基本技術,更有許多的咖啡相關書籍,是以咖啡拉花作爲封面的專業象徵。</p>

在這裏還要給咖啡愛好者們一個小揭祕,咖啡最佳飲用溫度爲60~65℃,而其實做拉花最適合的溫度爲55~60℃,所以有時你拿到一杯漂亮的咖啡時是不是覺得喝起來不夠燙?下次你就知道你要的只是拍起來好看的漂亮圖案還是讓你的咖啡師正常做熱一點好喝,如果他/她同樣給你做出藝術一杯,那麼適當的小費是禮貌的。</p>
