在合肥望江西路和潛山路交口，一家與星巴克極其相似的咖啡小館內，嘈雜的人聲明顯說出了大家對它的喜愛。而店主人告訴記者：“從去年開始，像書吧、動漫吧、汽車吧這種小衆型咖啡館，已經成了合肥的一個趨勢。”爲了能和世界巨頭星巴克在合肥市場一較長短，他們特意做出了這樣的一種經營模式，哪怕賣的咖啡杯，也是和星巴克從一家工廠定製，而他們的價格只賣29元。</p>

合肥市場：600家咖啡館只剩下200多家贏商網</p>

從去年開始，合肥咖啡行業，一個非常明顯的特徵，就是衆多小衆咖啡館“百花齊放”。自稱是合肥咖啡行業“元老”級的人物——棲巢集團拓展部副總經理西光海，如此評述。贏商網</p>
<p>
從合肥最早的咖啡館——1998年開業的常春藤咖啡至今，咖啡館數量從鼎盛期間的600多家，縮減到目前的200多家，而其中，有一定規模的咖啡館也僅僅100多家，西光海介紹。目前，合肥市場上從事咖啡經營的，都是些喜歡咖啡的“骨灰級”人物，他們開那種書吧、汽車吧等小衆咖啡館，也能迎合部分市場需要。“真正做咖啡的，絕對賺不了大錢、快錢。”西光海說。</p>
<p>
幾十個人投資一家咖啡屋，或者一個人投資做多種經營融合的咖啡屋，在合肥市場上比比皆是。“今年，房租漲了近一成，咬牙挺了，原料升級不止一個檔次，自己認了，設備加了，人工多了……”“堅守”在北一環的咖啡書語，已經成了行業的一個“縮影”。因爲不想偷工減料，不想昧心賺錢，所以，就算是咖啡屋，咖啡書語開始送起了“外賣”，從10元標準拿鐵到30元的咖啡不等。咖啡“大鱷”：</p>

在合肥“跑馬”“圈地”</p>

合肥的咖啡行業，最終拼的不是咖啡，而是其他。</p>
<p>
2011年8月，合肥百盛有了全市第一家星巴克，僅一年的時間就從元一、蕪湖路萬達廣場……擴展到10家店，遠遠把對手甩在了身後，一位曾經在合肥星巴克“打拼”過的人員敘述着。星巴克擁有“唯我獨尊”的強勢品牌地位，讓它甚至可以和業主簽訂排他性協議，即該處只能有星巴克一家咖啡店。所有的經營門店，也是隻租不買，不給底租只給銷售額的扣點，即便給扣點也只給8%~10%左右。</p>
<p>
星巴克推出的產品首先考慮的就是市場需求。”星巴克中國公共事務副總裁石東偉介紹，若是深入人心，即便價格不菲，也會贏得青睞，所以星巴克每一季、每一款都在滿足市場的胃口。</p>
<p>
根據《中國咖啡市場分析(2012年分析)》，預計未來中國咖啡消費每年增長速度爲15%，遠遠高於2%的全球平均增長速度，10年後消費總額將達到1萬億元。不管是拼資本，還是拼味道，誰會是咖啡消費這塊誘人蛋糕的最終享有者？</p>
