	<strong>　　關於保質期：</strong></p>
<p>
	　　預包裝食品的保質期是指產品的安全食用期 ，該保質期由生產者提供，標註在限時使用的產品上。</p>
<p>
	　　在保質期內，產品的生產企業對該產品質量符合有關標準或明示擔保的質量條件負責，銷售者可以放心銷售這些產品，消費者可以安全使用。</p>
<p>
	　　制定一種食品的保質期前，需要對食品進行微生物試驗、理化試驗及感官檢查等客觀的質量變化分析 ，而微生物指標往往是影響人體健康的最直接的因素。咖啡豆(粉)由於其溼度低不易滋生微生物，保質期比較長，一般鋁箔包裝袋的咖啡保質期爲12-18個月 ，進口咖啡多數是2年保質期。</p>

	<strong>　　用專業術語囉嗦這多，只想說明兩點：</strong></p>
<p>
	　　1、咖啡保質期是生產廠商依據行業規範自己制定，給銷售商和消費者質量做擔保的時間。</p>
<p>
	　　2、過了保質期存放得當的咖啡，人喝了也不會有什麼問題，無風味的咖啡通過加糖加奶也能成爲好喝的咖啡飲品。</p>
<p>
	　　所以，加糖加奶的咖啡好喝但不一定是新鮮咖啡!</p>
<p>
	　　如果說保質期是健康安全問題，那麼風味期則關乎美食本質!</p>
<p>
	<strong>　　關於風味期：</strong></p>
<p>
	　　風味期(也稱賞味期)咖啡烘焙後品嚐風味的最佳時期。新鮮烘焙的咖啡在一週內有個自發酵過程，使風味更趨完美，過了這個階段就開始氧化揮發，美好的咖啡風味開始漸漸散失。所以咖啡最佳的賞味期就在烘焙後兩週內，這時的咖啡會有非常新鮮的香氣，油脂也非常豐富，帶甜度的咖啡有明顯的回甘，咖啡粉經熱水的浸潤後體積明顯膨脹，這點常常就是鑑定是否新鮮烘焙的簡單方法。</p>
<p>
	<strong>　　新鮮咖啡的打開方式：</strong></p>
<p>
	　　大量實踐證明，咖啡熟豆的風味期基本在1個月以內，密封保存好的最長不會超過2個月。咖啡磨成粉後，表面積增大，加速了氧化和揮發，從而風味期更短，所以超市買掛耳咖啡很難喝到風味就是這個道理。</p>
<p>
	　　失去風味的咖啡只剩下不正的香氣和苦味，有的甚至尖酸帶哈喇味，完全不能代表一個品牌、產地或者級別的咖啡特色了，所以無論什麼品牌多好的咖啡，過了風味期就不能稱之好咖啡，&ldquo;新鮮、新鮮、新鮮&rdquo;是好咖啡的前提。</p>
<p>
	　　如果是自己在家衝煮咖啡，請做到：</p>
<p>
	　　購買新鮮烘焙咖啡，有可能儘量買熟豆回來自己現磨，多好的咖啡都不要囤貨，夠喝一個月就好。掛耳咖啡最好只買15天的量，喝完再買!</p>
