小野光是上環Brew Bros的咖啡師,四年前開店,憑咖啡的味道贏得一班捧場客。只選用墨爾本著名的Market Lane咖啡豆,洗水處理,輕至中度烘焙,更能凸顯咖啡的酸度、果香和地區風味;今天落柯打,明天送到,每星期空運抵港。“咖啡豆第一要訣是新鮮,不能妥協。”沖泡咖啡從不假手於人,咖啡機位置是店子的禁區,任何人不能越雷池半步;哪管人多時要等候十多分鐘。還不止,每天早、午、晚小野光都會先喝一杯咖啡以瞭解咖啡豆的變化。“每一批的豆都有些微差異,甚至溫度、溼度對咖啡豆都有影響。咖啡師是一種專業,也是對顧客的一份尊重。”</div>

有趣得是,小野光雖然已有一定經驗,但最近頻頻參加比賽,究竟爲誰而戰?事實上,近年香港<a href="https://www.gafei.com">精品咖啡</a>市場方興未艾,不時都有咖啡比賽,甚至好些咖啡店都會以得獎咖啡或咖啡師作招徠,是一種虛榮作祟?小野光訕訕地笑說:“要是贏了,咖啡也不會加價。”接着,才補充說:“是一種學習和進步。”老土,卻也是不爭的事實。</div>

“好水”沒有方程式</div>

在<a href="https://www.gafei.com">精品咖啡</a>的世界中,變量很多,變化也可以很大。不同地區的咖啡豆,不同的取豆方法,不同的烘培深淺等,以至研磨和沖泡器具和方法令<a href="https://www.gafei.com">精品咖啡</a>充滿可能性和趣味;只是當大多數人將目光放在咖啡豆上,小野光想到水。“一杯咖啡,可能只有1%是沖泡時萃取咖啡豆中的味道,99%其實是水!”以爲水是無色無味,實是水也分軟硬,當中亦含有不同的礦物。事實上,英國早有專著《Water for Coffee》以科學角度去解釋水對咖啡的影響。</div>

“簡單地說,軟水比硬水更適合沖泡咖啡,當中的鎂(Magnesium)會影響酸度,從而帶出咖啡豆的花香和果香;而水裏的鈣(Calcium)則會改變口感,令咖啡的質感略有不同。”只是何謂最好的軟硬度?最理想的鈣和鎂含量?根本沒有方程式,小野光唯有經過反覆沖泡和嘗試,去找到心目中最佳答案。“下個星期,我將會收到日本寄來的十公斤比賽用的咖啡豆,再找出最適合的水,看看吧。”說罷,又一頭栽進他的水世界。</div>
