我們在杯測咖啡的時候,發現有一個現象,就是種植在火山岩土質的咖啡,酸苦,甘醇及香味最爲平衡,因而口感豐富。</div>

有研究發現,這是因爲火山岩含有高濃度的硫磺和硫化物,而這些成分恰好是有些芳香物合成前所必備的元素。</div>

因而種植於火山岩土壤的咖啡通常有較濃的香味. 而土壤中的鉀元素也會增加咖啡的醇厚度。</div>
<div>
</div>

但是,有趣的是,種植在非火山岩土壤的咖啡,因爲硫磺與鉀元素較少,整體的風味因而較不平衡,卻反而發展出有個性及特色的風味。</div>

而溼度對咖啡又有什麼影響呢? 研究發現,高溼度產區的咖啡,水果味會較濃。</div>

例如:瓜地馬拉的科班產區,屬於熱帶雨林氣候,溼度在瓜地馬拉的八大產區中最高。</div>

而科班的咖啡,水果的香味也明顯高於其他產區,不過醇厚度稍差,</div>

因爲缺乏火山岩土壤中的硫磺與鉀元素</div>

有研究報告說,溼度高,會提高咖啡果肉的蘋果酸,而果肉中的果香成分被咖啡豆吸收後,就成爲咖啡口感風味中的水果味,</div>

此外,高溼度有助於糖分的生成,糖度高的水果?很多都生長在溼度高的地區,不過如果溼度高加上溫度高,水果容易早熟及腐爛.</div>

所以如果咖啡種植在高溼度而沒有高溫度的地區,所孕育出咖啡,風味就會獨特而迷人。</div>
