"Latte" 在歐洲是牛奶的意思,人們把牛奶倒入咖啡後產生圖案線條,慢慢地變成一種藝術,稱之爲 "Latte Art"。<br />
<br />
咖啡拉花藝術使用的咖啡不一定侷限於拿鐵咖啡(Latte)或義式咖啡,只要在衝煮出來的咖啡表面,作出藝術化的花式圖案線條,就可稱之爲 "Latte Art",這使咖啡拉花藝術 "Latte Art" 的定義更廣泛。如果喝咖啡時,吧檯表演咖啡拉花,一定讓你覺得很新鮮,在視覺美感上絕對加分不少!<br />

而且可以讓口感更好喝呢!其實,如果你有興趣,也可以在家學習咖啡拉花技巧~~準備材料與器具:咖啡、牛奶、咖啡杯(約 200cc)、拉花杯、奶泡壺或打奶泡鋼杯、打奶棒、尖端形狀工具或牙籤、大圓匙、巧克力醬、有顏色糖漿或果醬、煮咖啡工具或咖啡機首先,將奶泡打好。左手固定住咖啡杯,右手拿拉花杯,然後拉花杯就着咖啡杯將奶泡倒入。等接近半杯時,將拉花杯移至咖啡杯杯緣處,注意奶柱不能斷,接下來開始輕輕晃動拉花杯,不要管其它什麼技巧,慢慢的「白色波紋」會出現。<br />
<br />
直到快滿杯時,停止晃動然後收起拉花杯,收杯切記要結束得乾淨利落。運用奶泡的稠度,倒入咖啡時,奶泡會一層一層的向前推擠,於是咖啡跟奶泡會區隔出層次。<br />
<br />
結束前奶泡杯不用直接離開,而是要提高奶泡杯,利用最後的奶泡向層次的中間劃一條線當收尾,因爲奶泡杯提高會讓奶泡陷入杯底,讓單調的層次增加變化。<br />
<br />
奶泡杯的杯底一定要記得翹高,不然奶泡下不來。晃動時一定要記得是"左右搖晃",而且不可太快。<br />
<br />
奶泡不一定要用倒的,用舀的也可以。奶泡倒入時可快可慢,全憑經驗來控制,新手常以爲剛開始時要慢慢倒,這是不正確的。倒入奶泡時可以稍微抖動奶泡杯,不要拿太高,以不碰到杯緣爲原則。要讓奶泡杯上層的奶泡順利流入咖啡杯,如果上層奶泡一直停在奶泡杯裏面,那麼流到咖啡杯的奶泡可能會太稀,這樣咖啡拉花可能拉不起來了。<br />

這是倒奶泡的基本技巧,但卻是咖啡拉花的基本功,咖啡花式拉花技巧都是從這裏開始,剛開始練習不要去想什麼多漂亮的圖案,先把基本功練好,千萬不可小覷。<br />
