<p>
	　　漫咖啡會長辛子相最近很忙，因爲他要開很多新店。他不僅要監督正在施工的20家新店，還要爲已經簽約、將要施工的60家店做規劃。</p>
<p>
	　　自3年前第一家店在北京的望京落戶以來，漫咖啡目前已經在全國開了26家店，遍佈於成都、杭州、上海、武漢、太原、福州、鄭州等城市，僅北京就有14家。</p>
<p>
	　　&ldquo;10年內，我們要開到3000家&rdquo;，這位身材不高、手裏總是夾着一根雪茄的韓國人辛子相，對中國的咖啡館市場非常樂觀，並許下了豪言。</p>
<p>
	　　不可否認的是，對中國的咖啡館市場看好的，不僅只有辛子相。咖啡連鎖巨頭贏商網星巴克聲稱到2015年要在中國開1500家店，幾乎是目前規模的翻倍。而在中國開店速度最快的Costa也在今年提出&ldquo;3年內新開250家新店&rdquo;的計劃。背靠華潤地產的太平洋咖啡也於今年初在北京秀水街開了第100家店。</p>

	各種專注於細分市場的咖啡館也開始興起。車庫咖啡、3W咖啡、貝塔咖啡等專門針對互聯網人士，北京的魚眼兒咖啡、上海的質館咖啡則着力於推廣精品咖啡，還有提供咖啡外送服務的參差咖啡和連咖啡，更奇葩的是，有一家叫&ldquo;Kedney Shirt&rdquo;的襯衫店也賣起了咖啡&hellip;&hellip;</p>
<p>
	　　據統計，目前全國有13600家咖啡館，且這個數字每天都在增長，北京市場的增長率更是高達18%。在杭州，5月份新開了10多家咖啡店，而據杭州市咖啡西餐協會的統計數據，往年杭州平均新增的咖啡店也才20~30家。</p>
<p>
	　　中國的咖啡館行業真的熱起來了。不過，這究竟是積累多年的需求大爆發，還是市場泡沫？</p>
<p>
	　　活下來的探路者</p>
<p>
	　　將時光倒轉15年，那時候的北京，咖啡館甚至還不能算個生意，因爲對於大部分中國人來說，咖啡館是個離他們生活很遙遠的場所。</p>
<p>
	　　正是在那個時候，莊崧冽在北京大學東門的成府街開了第一家雕刻時光咖啡館，售賣現磨咖啡。那時，與大多數中國人一樣，莊崧冽其實也不太懂做咖啡，有時候還要靠來店裏消費的外國人，時不時指導一下他。這是1997年的北京。</p>
<p>
	　　魚眼兒咖啡館的咖啡師大貓早在20世紀90年代就接觸到現磨咖啡，這要得益於他在外企的工作經歷。&ldquo;那時候咖啡粉只能到友誼商場去買，用跟裝奶粉一樣的罐子裝着，一罐要一兩百元錢。咖啡壺就更難買，全是進口貨，一個最小號的美式咖啡壺也要三四百元錢，相當於一個月的工資了。&rdquo;大貓回憶，&ldquo;約朋友聊事情，不是去茶樓就是去三里屯的酒吧，還真沒有什麼咖啡館可以去。&rdquo;</p>
<p>
	　　源自中國臺灣地區的上島咖啡，也於1997年進入海南，以連鎖加盟的形式迅速擴張，至今有1300多家店遍佈全國。在星巴克進入之前，它佔據了中國咖啡館市場90%的江山。但嚴格意義來說，上島咖啡並不是一家真正的咖啡館。上島咖啡不僅賣咖啡，也賣各種壺裝的茶飲料，食物裏有各種中式米飯，而非一般咖啡館的甜品、三明治等，佈局也以包間爲主，並非一般咖啡館的開放空間。</p>
<p>
	　　咖啡館真正進入中國人生活的開始，還要從1999年星巴克進入中國市場算起。除售賣咖啡外，星巴克一直不遺餘力地向中國人傳達&ldquo;咖啡文化&rdquo;，並培養中國年輕人喝咖啡的習慣。</p>
<p>
	　　&ldquo;星巴克的品牌甚於咖啡&rdquo;，創始人舒爾茨在自傳《將心注入》中寫道。它致力於提供給消費者一種浪漫的感覺。這種浪漫感覺體現在星巴克對咖啡豆所賦予羅曼蒂克色彩，並使店堂內的一切感覺都浪漫宜人：爵士樂、牆上張貼的藝術照片，椅子的樣式&hellip;&hellip; 這種&ldquo;浪漫&rdquo;在早期被中國人貼上&ldquo;小資&rdquo;標籤，它對新時代的中國年輕人有着致命的吸引力。</p>
<p>
	　　&ldquo;在中國，過去10年裏，因爲星巴克和Costa等探路者的苦心經營，已經使一波人養成了喝咖啡的飲食習慣和端着咖啡給自己貼標籤的習慣，精神和物質的享受都變得標籤化了。&rdquo;外送咖啡服務&ldquo;連咖啡&rdquo;投資人王江總結。他的另一個爲人所知的身份是移動互聯網應用開發商活力天匯CEO，其旗下應用航班管家前不久被攜程入股，據傳投資金額不低於1億元人民幣。</p>
<p>
	　　一個有意思的現象是，雕刻時光、上島咖啡和星巴克，這些中國咖啡館行業的探路者，竟然都活了下來，這在其他行業是很少見的。</p>
<p>
	　　移動互聯網推動第三空間</p>
<p>
	　　咖啡館越來越不是個僅僅喝咖啡的地方。</p>
<p>
	　　&ldquo;中國沒有一個能坐下來跟朋友聊聊天的地方&rdquo;，辛子相認爲，即使沒有漫咖啡，也會有別的咖啡館來提供這樣一個被稱爲&ldquo;第三空間&rdquo;的場所。</p>
<p>
	　　&ldquo;中國有茶館，但是茶館裏茶的價格差別很大，有幾百元一杯，也有幾十元一杯的，那你請人喝茶到底點哪個？這就是一個很複雜的問題了。&rdquo; 辛子相說，咖啡就不一樣，一杯咖啡就幾十元錢，大家進去之前都知道是這個價格，沒什麼負擔。</p>
<p>
	　　莊崧冽曾總結咖啡館的經營祕訣，他認爲&ldquo;開放和交流是咖啡館裏的基本守則&rdquo;。</p>
<p>
	　　關於這點，豆瓣公司CEO阿北有個比喻，&ldquo;我一直覺得豆瓣就像一個線上的&lsquo;雕刻時光&rsquo;&rdquo;，他說，人們喜歡咖啡館不是因爲某家的咖啡是全世界最好的，或食物是全世界最好的，只是因爲它營造了一個能坐下來、能說話的空間。<br />
