在家衝咖啡什麼的聽起來簡直太美妙了,不過要在家裏衝出好咖啡得做點功課,比如說了解一下研磨和注水之類,精品咖啡理論太特麼多了,還神神叨叨和自釀酒可可什麼的不太一樣。
但是說實話,咖啡確實有很多細節在科學技術上有跡可循,況且也確實有人反映家裏衝得沒外面好。
如果你想做出和咖啡店一樣的咖啡(首先你要有很多錢,然後你要花很多錢)。好吧,上面騙你的,其實不用花很多錢,但是你得先了解一下精品咖啡的基礎知識:比如說浸泡和過濾的區別;萃取、溶解度、TDS這些分別是什麼鬼;什麼是衝煮比例;什麼是萃取率。(說人話好嗎)
同時我還會忽悠你幾種衝煮技巧,可以實際改善咖啡口感的,比如說攪拌,悶蒸,注水之類。
完美一杯需要多種變量完美配合
萃取及溶解度Extraction & Solubility
科學地說,衝咖啡就是把經過烘焙和研磨的咖啡中可溶解的物質提取出來的過程。(一般)衝咖啡都使用熱水,而衝煮就將咖啡本身的多種化合物提取出來。
這些可溶解的化合物就是我們要討論的溶解度,而衝出來的咖啡液一般會含有以下這些可溶物質:
咖啡因(苦的)
酸類(酸或者甜的,如蘋果酸、檸檬酸之類)
脂類或脂肪(粘度)
糖類(甜味及粘度)
碳水化合物(苦味及粘度)
以上這些物質溶解度和萃取效果受限於很多因素,比如說:咖啡品種、研磨度、水的礦物質含量、咖啡豆烘焙度、衝煮手法等。
有時候特定的衝煮手法只適用於特定的一款豆子,到另一款豆子上就不聽話了。這說明,完美的萃取手法可是靠學習和經驗得來的。咖啡師們整天裝作很專業地討論“怎麼衝”,其實他們也是從固定的手法開始,再由此調整變量以達到完美的風味。
下面我們再探討一下浸泡和過濾:
通過多喝來找到自己想要的味道
浸泡Immersion
就是使咖啡粉完全浸在水中,這些水可以隨着浸泡時間推移萃取咖啡。
最常見的浸泡衝煮手法就是法壓壺,還有虹吸、聰明杯、愛樂壓,以及鑑定一款豆子是否妖豔**的終極方法——杯測;大部分所謂的低溫萃取,比如傳說中的冷萃(還有其他亂來的名字比如冰萃、冰釀都是一個東西,都是用冷水泡咖啡粉),其實都是浸泡法。
浸泡法是一個基本上不需要手法的衝煮方式,只需要加水然後等個4、5分鐘。
浸泡法的盡頭都需要過濾,法壓壺有個金屬濾網、聰明杯需要濾紙等。無論使用那種過濾裝置,最終都是爲了將咖啡液和咖啡渣隔開(使用濾紙的話也會將咖啡中的部分油脂隔掉)。
隨着時間過去萃取速度也會下降,因爲咖啡中的物質逐漸溶於水中,形成咖啡的“飽和溶液”。溶劑中充滿了可溶性物質的時候,溶劑溶解溶質的能力也會逐漸下降。
以上理論的意思是,你一般別期待一杯浸泡法制作的咖啡超級濃郁絲滑像德芙巧克力一樣。但是有一些製作的小技巧,我們會在下面再討論。
一般來說浸泡法都使用熱水
過濾Infusion
過濾指水不斷流經咖啡粉層和過濾裝置的一種衝煮方法。常用的一些過濾工具如Hario V60濾杯、Chemex、Kalita蛋糕濾杯等,還有些自動的美式滴濾機等。
相對來講,過濾比浸泡的萃取效果更好,因爲它解決了浸泡法中飽和的問題,並且有源源不斷的新鮮水去進行萃取,使得更多的可溶性物質可以萃取出來。如果水流不斷,理論上可以認爲咖啡中所有的可溶解性物質都可以萃取出來。
但是,過濾也會有自己的問題,所有手法的東西都和技術有關。舉個栗子,水流會傾向往粉層中阻力小的間隙穿過,而導致一部分的咖啡粉根本沒有參與到萃取這個過程中。另外,如果咖啡粉顆粒研磨過細,會對水流產生阻礙。結果可能導致萃取時間過長或粉碗滿溢,毀掉咖啡或弄髒工作區域。

濃縮咖啡Espresso
技術上來講,濃縮咖啡屬於過濾咖啡,但鑑於其本身的一些特性,濃縮咖啡通常都區分爲另一個範疇。因爲:濃縮咖啡是在壓力下萃取出來的。在適當的條件和設備下,任何豆子都可以製作成濃縮咖啡。
濃縮咖啡的量通常不多,一般20-40ml不等,也因此比一般的過濾咖啡口味上濃很多。製作濃縮咖啡的幾個要素:較細的研磨度、加壓水、20-30秒的萃取時間。
濃縮咖啡的最終成品也因其衝煮比例和一般的浸泡或過濾咖啡不同,於是下面我們可以討論衝煮比例了。
正確的粉水比造就正確的味道
衝煮比例Brew Ratio
衝煮比例就是指衝煮用到的咖啡粉和水的比例(中國人又稱其爲粉水比)。如果你想隨意發揮粉水比也是ok的。
由於濃縮咖啡的萃取太效率,所以其粉水比一般是1:2(一份粉使用兩份水萃取)。
如果你想嚴格遵守粉水比,就需要嚴格測量粉量和水量。因爲這樣能使你快速得到衝煮套路。使用電子秤,最好防水並帶有防燙墊,將會成爲你自家衝煮的最佳小夥伴。注意是測量重量而不是體積哦親。

屈光儀與TDS
要測量萃取率可以使用一種叫做屈光儀(光學折射計)的儀器,這種儀器的工作原理就是,溶解於水的化合物可以使射入液體的光發生折射,簡單來說,總溶解固體(TDS)越多,折射現象越明顯;TDS越多,說明萃取越充分。
當大家討論一款咖啡的強弱時,實際上是指TDS——不管他們本意是否如此。味道“強勁”的咖啡有更高的溶解率。但是,和這杯咖啡好不好喝沒什麼關係。
通過TDS和和粉水比,你已經能確定萃取率了。萃取率直觀地告訴了我們咖啡液中到底溶解了多少咖啡物質,同時也對完美衝煮提供了些思路。

衝煮調整
上面已經提到使用一些特定的技術或手法可以提高風味,那我們看看實際有哪些:
攪拌Agitation
攪拌,就是攪動粉層,無論在浸泡還是過濾都可以提高萃取效果。
對於浸泡來說尤其有效,原因有二:一是攪拌可以打散浮積在表面的粉層,你試試不攪拌就壓法壓壺,你試試?二是還記得上面說的浸泡容易造成飽和現象影響萃取嗎?攪拌某程度上就解決了這個問題。
用勺子攪拌也可以
加水Bypassing
加水進已經衝好的咖啡中,是調整濃度最簡單的方法。如果你喜歡味道濃的咖啡但不喜歡太粘稠的口感,那麼只需加少量的水就可以了。後加水的方法不改變(衝煮時的)粉水比和萃取率。
當然你也可以把加水弄得很嚴謹,稱量水流並監測前後的TDS,以達到最佳效果。
斷水Pluse
斷水指過濾衝煮時分多注水注入而不是使用恆定不斷的水流。斷水可以使粉層對應每一注水獲得更好的萃取效果。斷水次數越多,越能提升咖啡的一致性和萃取效果。
斷水可以提高萃取率
預浸泡(pre-infusion,又稱爲悶蒸The Bloom)
預浸泡指先用少量的水對咖啡粉進行溼潤,適用於過濾衝煮,一般操作都是先預浸泡30-60秒,再正式衝煮。
說起來其實和斷水有點像,對於過濾衝煮來說,悶蒸可以使改善整體的萃取情況。
