好咖啡VS壞咖啡</p>
<p>
現在很多咖啡店都打出烘焙精品咖啡、現磨新鮮精品咖啡、精選咖啡的旗幟，那麼什麼是精品咖啡呢，有多少消費咖啡的人知道精品咖啡，又有多少咖啡店經營者懂得精品咖啡?</p>
<p>
這是個很大的疑問，要知道在這個以茶消費爲主的國家，讓人們輕易接受咖啡是比較難的一件事，即便如此，咖啡消費在國內還是很走俏的商品，而爲了讓更多人瞭解咖啡，接受咖啡，又有無數的咖啡師投入其中，爲了讓咖啡在市場流行，每個咖啡師都在做着不同的努力。</p>
<p>
一般認爲，與傳統咖啡相比，精品咖啡的風味更突出，特性明顯，有特定的產地和明細的農莊劃分。不過Dodo君認爲，其實精品咖啡和普通咖啡還有一個基本的不同，就是生產方式的不同。</p>

回顧歷史，傳統的咖啡是依靠剝削咖啡農而獲得利潤，通過劣質咖啡相互拼配達到口味上的要求，這也是大多數咖啡公司的經營模式，但精品咖啡卻打破了這種模式，爲咖啡行業帶來一次革命性的進步。</p>
<p>
像所有工業化生產的東西一樣，傳統咖啡受制於大量生產以及高額利益的因素，一般品質較差，缺乏豐富的味道和香氣，有一些產品頂多可以看做是富含咖啡因的飲料(咖啡因甚至可以通過工業提取後添加在食品中)，這樣的模式摧毀了咖啡農們的積極性，導致惡性循環。</p>

喏，上邊這些你在超市能夠買到的，無論是罐裝的液體咖啡還是粉末狀的速溶咖啡，都是工業化的流水線生產出來的“壞咖啡”。</p>
<p>
精品咖啡的出品過程</p>
<p>
排除了“壞咖啡”之後，我們再來根據咖啡的出品過程，來仔細研究各種“好咖啡”的具體不同之處。</p>

一杯“好咖啡”，其經營者會更注重產地，更注重咖啡的種植，從源頭上改善咖啡的品質，同時也更加註重咖啡種植農民的待遇和境地。他們的目標是讓咖啡產業鏈條上的每個人都能夠獲得自己正當的利益，使整個行業健康發展。</p>

“好咖啡”將從全世界各大咖啡產地的咖農進行種植高品質的咖啡樹開始，到精心的收穫果實並進行初步加工做成生咖啡豆，再通過咖啡商人運輸到每一個咖啡師手中。</p>
<p>
根據不同的用途，咖啡師會選擇使用單一品種的咖啡豆，或者用不同品種咖啡豆進行拼配。經過專業的烘焙加工，生咖啡豆將變成程度不同的熟咖啡豆，其口味也各不相同。熟豆需要再經過研磨、沖泡，以及根據口味需要加奶加糖加冰……總而言之，一杯美味的咖啡，是要經歷如此複雜的過程才能最終送到你手中。</p>
<p>
好的咖啡從種植開始</p>
<p>
世界上的咖啡樹共有四種，真正具有商業價值而且被大量栽種的只有兩種。一種是阿拉比加種(ARABICA)，另一種是羅巴斯塔種(KOBUSTA)。</p>

一般來講，幾乎所有的精品咖啡都出自阿拉比卡種的咖啡豆。所以，當你看到麥當勞打出這樣的廣告，他們當然是想告訴你他們的咖啡好喝咯。不過你也不要隨便就被說服了，因爲並不是所有阿拉比卡豆都是經過精挑細選過的精品，因爲你喝過的很多咖啡其實都是經過拼配的，包括各種小咖啡館，以及你們喜歡曬的星巴克或者漫咖啡。</p>
<p>
意式咖啡與單品咖啡</p>
<p>
世界上主要的咖啡產地，都是在北緯25°到南緯30°之間的熱帶地區，每個產區不同的海拔、土壤、氣候、種植水平、處理方式，都會影響到咖啡豆自身的風味。</p>

咖啡師會根據需求，來使用單品咖啡豆或者用幾種豆子做拼配來製作咖啡。從鑑賞角度來看，兩者可以說截然不同：</p>
<p>
單品咖啡:追求真實表達咖啡豆自身的原生態個性風味，越真實越好、越純粹越好，任何雕琢、掩飾或修正都是不可取的。</p>
<p>
意式咖啡(含花式咖啡):重在創新，創新的目的是創造出一種與衆不同的、令人愉悅的味覺追求，複雜又渾然一體，均衡而統一。</p>

所以當你看到以上這些命名的時候，你就大概知道這個咖啡是屬於單品咖啡還是拼配豆了。</p>
<p>
拼配豆出品意式咖啡</p>
<p>
意式咖啡說白了就是全部以意式濃縮咖啡爲基礎，加上水、奶、奶油、糖等內容，調製出不同的口味，然後有人給它們起了各種好聽的名字。</p>

影響意式咖啡口味的因素主要有這幾點：</p>
<p>
1、豆子的混合比例;</p>
<p>
2、磨製的精細程度;</p>
<p>
3、壓制萃取的時間;</p>
<p>
4、奶泡的打發程度;</p>
<p>
5、其他添加的成分。</p>
<p>
哦，對了，最重要的還要看當天咖啡師的心情怎麼樣。。。</p>

單品豆出品精品咖啡</p>
<p>
而單品咖啡，則是要努力展現出每一種不同產地的咖啡之中的不同風味，比如印尼的曼特寧，濃郁醇厚，適合中深度的烘焙;而埃塞俄比亞的豆子則有豐富的果香，適合比較淺的烘焙度。(這個直觀感受和茶是一樣的，熟普洱衝出來顏色很黑，而生普洱則是淺色，咖啡也是同樣的原理)</p>
