一些朋友買了家用半自動咖啡機,想做卡布奇諾和拿鐵,但也常聽到有朋友說,但他們總是說奶泡打不起來。這裏豆叔不想說機器的原理和壓力的問題,而是建議大家買一個手動打奶器來打奶泡。</p>
<p>
手動打奶器的結構與特點</p>
<p>
手動打奶器從結構來說包括奶缸,通常都是不鏽鋼的,也有塑料的和玻璃的,另外還有一個有雙層濾網的拉環杆。與法式壓濾壺不同,法式壓濾壺只有一層濾網,而打奶器有雙層濾網。手動打奶器可以打冷牛奶,也可以把牛奶加熱後再打奶泡。如豆叔的豪坊咖啡有一款——日本tiamo200cc雙層手動打奶器,冷牛奶也可以打出好的奶泡,雙層的打奶沫器,讓泡沫更細膩、棉醇、堅挺、讓奶沫更像是奶油的口感。但是又不會有奶油的甜膩。</p>
<p>
上面談到了用手動打奶器打冷牛奶,談到打熱牛奶,那爲了有些人要喝熱卡布奇諾。但是豆叔始終認爲這是在家裏做花式咖啡的上佳器具。</p>
<p>
手動打奶器的操作</p>
<p>
豆叔把手動打奶器的操作步驟分解如下:</p>
<p>
1、將牛奶倒入奶泡壺中,份量不要超過奶泡壺的1/2,否則製作奶泡的時候牛奶會因爲膨脹而溢出來。</p>
<p>
2、 將牛奶加熱到60度左右,但是不可以超過70度,否則牛奶中的蛋白質結構會被破壞。注意!蓋子與濾網不可以直接加熱。(如製作冰奶泡則將牛奶冷卻至5度以下,當然,不要冰過頭而讓牛奶結冰了。)</p>
<p>
3、將蓋子與濾網蓋上,快速抽動濾網將空氣壓入牛奶中,抽動的時候不需要壓到底,因爲是要將空氣打入牛奶中,所以只要在牛奶表面動作即可;次數也不需太多,輕輕地抽動三十下左右即可。</p>
<p>
4、移開蓋子與濾網,用湯匙將表面粗大的奶泡刮掉,留下的就是綿密的熱(冰)奶。</p>
<p>
什麼樣的牛奶適合打奶泡</p>
<p>
市場上的牛奶種類繁多,挑得人眼花繚亂,到底什麼樣的牛奶適合打奶泡做咖啡呢?首先我們先要搞清楚,奶泡如何形成的!無論冷的奶泡還是熱的奶泡,都是牛奶中的乳脂肪包裹中空氣產生的小氣泡,所以,乳脂肪的穩定和多寡,影響到奶泡的質量和持久度,很多時候,我們會發現,一杯卡布端上來後,表面的奶泡就一個個的破掉,最後變成半杯咖啡了!這個就是因爲,牛奶的乳脂肪含量較低,或者不穩定。</p>
<p>
一般來說,我們蒸奶泡採用的是全脂牛奶(乳脂肪含量爲3。5%——4%),但是由於國產牛奶的穩定性及“還原奶”等弊端,所以,很難找到穩定的牛奶。咖啡業對牛奶的選用,經歷了從光明——帕瑪拉特——新綠園——雀巢的過程,目前,一些大的連鎖考慮成本,會採用新綠園,而一些小的咖啡店會採用雀巢,甚至進口牛奶,畢竟品質決定了一切。</p>
<p>
所以,建議大家,還是用雀巢比較實際,相對來說價格合理,3.5%的乳脂肪含量也比較穩定。</p>
<p>
手動打奶器使用的牛奶溫度</p>
<p>
手動打奶器所要求的牛奶溫度就不形而上學的按照專業咖啡廳那麼教條了,比如說您要喜歡比較熱一點的花式咖啡,就將牛奶溫度加熱到您需要的溫度就可以。另外打奶的祕訣在於用左手按緊上蓋,右手將拉桿輕壓後用力向上提,感覺就像向上抽,一般五六下後當你覺得向上提拉有點費勁時,奶泡就很棉密了。</p>
<p>
將牛奶(加熱或未加熱)視自己情況而定,倒入奶杯最多二分之一處,找一塊毛巾或抹布墊在桌面上,蓋好拉環蓋,用左手按住上蓋,右手提拉拉環杆,有一種向上抽的動作意識,而不是向下壓擠,五六次後將感覺向上抽拉有阻力感,若繼續有拉不動的感覺,那時奶泡就非常綿密了。</p>
