現在市場上有許許多多種拉花杯品牌,不同材質、容量、嘴型、克重、顏色,不勝枚舉,這篇文字並不會向您推薦某款或某幾款品牌的拉花杯,而是嘗試告訴大家,在衆多選擇面前,怎樣才能選擇一種合適的拉花杯。</div>

在拉花賽多次獲得冠軍榮譽的朋友曾分享:拉花杯當然存在很多區別,最關鍵的問題是你要去試著使用它。</div>

特別是對於精進要求很高的選手來說,如果你能感受到不同拉花杯之間的細微區別,那麼它對你來說就是有區別的;如果你感受不到變化,那麼先不要糾結這件事情。</div>

<strong>最基礎的需求</strong></div>

首先,你的奶杯要足夠寬,這樣在打奶的時候能夠形成漩渦效果。產生漩渦是爲了將大氣泡打碎,變成一個個微小的小氣泡。在牛奶被充分打發和均勻的加熱之後,這些微型氣泡纔會產生,纔會有像絲絨般順滑、綿密、表面光亮的牛奶咖啡。</div>

<strong>二、大小</strong></div>

大多數的奶杯都有一到兩不同的規格,12oz(360ml)和20oz(600ml)。當然,也存在其他容量規格的奶杯。</div>

我們應該根據出品需要來決定使用多大的奶杯。如果奶杯太空,蒸汽出口無法完全沉沒在牛奶裏面,會產生大氣泡的產生,也會讓牛奶產生噴濺;如果奶杯太滿,在旋轉的時候,牛奶有可能會溢出奶杯邊緣。</div>

最理想的量,是在奶杯中倒入牛奶至奶杯嘴的下面的突出位置,也就是大約在奶杯的1/3處。</div>

拉花杯的容量大小還會影響到拉花動作時的傾斜角度,這對於衝型和收尾都會有影響,當你習慣之後,便會在使用起來遊刃有餘。</div>

<strong>三、材質</strong></div>

大多數人會選用高質量的不鏽鋼材質,因爲可以保證用蒸汽加熱後的牛奶溫度的一致性,牛奶的打發溫度更容易被及時感知。如果你覺得這個溫度讓你感到燙手、或者十分不舒服的話,你可以嘗試外面帶有特氟龍塗層材質的奶杯來保護你手指。</div>

<strong>四、嘴形</strong></div>

有經驗的咖啡師和專業人士使用什麼奶杯都可以拉出一致性高且完美無缺的花紋,而有些杯嘴的設計是特別適合做特定圖案的。杯嘴的不同設計也會讓針對性的教學變得更容易一些。</div>

心形和鬱金香應該是咖啡師開始拿鐵拉花旅程的起點。簡單來說,我們是先從模模糊糊的“一坨”開始的,但是要非常漂亮的倒出這“一坨”,要有著圓潤的外形。如果你是剛開始學習拉花,或者剛剛對於打發牛奶這些找到一點點感覺了,那麼想要提升這種圖案的塑造,可以選用經典款圓嘴的拉花杯。這種拉花杯能夠讓泡沫均勻平緩,並相對以一個圓潤的外形流出。</div>

但用這種奶杯相對較難拉出極其細膩的組合圖案,但是Slowsetta(壓紋少且葉脈寬形的圖樣)或許是你的一個不錯的選擇。</div>

傳統的葉子花紋,或者其他複雜的組合圖形(像是天鵝或孔雀)更適合用窄口、相對尖嘴的奶杯。這樣的設計讓你能夠更好的控制奶流走向,方便對細節進行設計。</div>

<strong>五、有把手?還是沒把手?</strong></div>

不管是有把的還是沒把的,都根據你拉花的時候的習慣而定,有些人認爲無把的奶杯在拉花的時候能賦予更多的靈活性,手拿的位置也多變,給你更多的可控性去控制奶流。</div>

但也要注意奶杯的導熱,如果你選擇了一個無把的奶杯,一定要注意外面的奶杯套的隔熱效果一定要好。</div>
