拉花和雕花統稱爲牛奶拉花藝術(Latte Art),前者是在往濃縮咖啡中傾倒熱牛奶的同時通過手腕抖動等技術動作直接“拉”出圖案,後者則是藉助巧克力醬等輔料,以及牙籤、吧匙等工具做些雕刻工作,使之圖案完美、拉花是基礎,雕花是輔助,拉花考驗的是技術,雕花考驗的是創意,一個優秀的咖啡師一定是拉花與雕花並重。</div>

牛奶拉花這種需要大量實踐的技能是一線吧檯咖啡師日復一日積累起來的“看家絕藝”。如果提高速度、創造樣式、改進細節、提升美感是“牛奶拉花大師們”津津樂道的話題,常常今我羨慕不已。</div>

<div>
學習牛奶拉花需要遵循五個步驟:</div>

第一步,我們首先需要選擇一個帶尖嘴600ml拉花奶缸和大約200ml圓口卡布奇諾咖啡杯,並保證能夠萃取出色的Espresso(最好是使用Espresso咖啡機,因爲咖啡油脂的豐富程度與拉花密切相關),能夠打發出綿密厚實的奶沫。</div>

第二步,首先練習手腕抖動,可以用清水代替牛奶進行。隨後練習流量和流向有精準控制,這是依然可以用清水代替牛奶,用醬油代替杯中的咖啡——當然用咖啡渣調成糊狀更能模擬意式濃縮咖啡的質感。</div>

第三步,練習基本圖案的呈現過程,儘量做到熟能生巧。桃心和樹葉是兩種基本的牛奶拉花圖案。起點位置也有不一樣</div>

第四步,使用真的牛奶和咖啡,進行基本圖案的拉花實踐。</div>
<div>
</div>
<div>
第五步,有了第四步的基礎,已經成爲了合格的牛奶拉花藝術者,接下來說要對技術進一步精益求精。</div>

讓我們萃取一杯Espresso,然後一隻手握咖啡杯,杯口微微向裏傾斜,另一隻手端住奶缸,奶缸高度要超過咖啡杯大約10cm,內裏有打好的奶沫,且缸體微微傾斜,尖嘴向前對着咖啡杯。接下來我們便開始拉花之旅了。</div>

【拉花桃心圖的基本步驟】</div>

</div>
<div>
1.將牛奶緩緩注入咖啡中,注意把握好高度,不要破壞表面的咖啡油脂,牛奶的注入點決定了拉花格格局和基本位置,我們選擇的牛奶注入點可以是杯子中心點稍微偏後一點。</div>
<div>
</div>
<div>
2.當杯中咖啡與牛奶已接近2/3容量時,注入點四周已經出現了一團不規則的“白色棉花”。此時放低拉花缸,並將其往後拖至咖啡杯邊沿上方,將生成的“白色麪糰”往前“推”去,形成一個圓形圖案。</div>

3.開始在原處輕微抖動手腕,左右搖擺奶缸,使得纖細的層狀線條出現並一層一層水波紋般向外推動成型。一個多層的同心圓圖案已經基本出現。</div>
<div>
</div>
<div>
4.咖啡杯逐漸擺正,與些同時將奶缸往杯子前點移動,使得此時注入的牛奶從同心圓中心點切過去,一直走到咖啡杯邊緣前點,這才停止牛奶傾倒收尾。心形圖案就此形成。</div>

</div>
<div>
【拉花樹葉圖案基本步驟】</div>

</div>
<div>
1、將製作後的牛奶倒入裝有Espresso的杯子中,注意剛開始不要讓奶泡浮在咖啡表面,杯子向拉花缸方向傾斜,注入時從中心點靠後一些的地方注入。</div>
<div>
</div>
<div>
2、當咖啡表面開始有泛白現象時,加大倒入牛奶的量,同時搖動拉花缸會出現紋理,此時不要慌張,繼續保持搖晃和加大的流量,慢慢向後退。</div>
<div>
</div>
<div>
3、退到杯子邊緣後提起拉花缸,變爲小流量倒入牛奶,然後向前收出一條直線即可,收到葉子起始的地方就停止倒入牛奶。</div>
<div>
</div>
<div>
4、一杯的葉形咖啡拉花製作完成</div>
