	<span style="font-size:16px;">平常大家喜歡飲的意式咖啡，都是建立在濃縮咖啡（Espresso）的基礎之上，所以一杯好飲的濃縮咖啡，可稱得上是咖啡的靈魂。談到濃縮咖啡，油脂必然是大家不能忽視的重要指標。因爲油脂除了給予濃縮咖啡重要的觀感特質外，某程度上亦改變了濃縮咖啡的風味及口感。可是，這層油脂到底是什麼呢？</span></div>

	<span style="font-size:16px;">要了解這些油脂怎樣產生，要先了解濃縮咖啡的製作過程。以專業的意式咖啡機爲例，使用 18 至 20 克 的咖啡粉，用 9 個大氣壓 （ 即 9 Bar ），萃取出 35 至 40 克的濃縮咖啡。高溫、高壓，配上合適的咖啡粉，就能製作出一杯濃縮咖啡。</span></div>

	<span style="font-size:16px;">濃縮咖啡剛剛萃取出來時，表面會有一層金黃色至朱古力色的油脂；這層油脂與壓力密不可分。水在加溫、加壓狀態下，會萃取出咖啡粉層中的可溶性物質，這個過程會乳化咖啡中天然存在的脂肪及油份。同時，新鮮烘焙的咖啡豆含二氧化碳，在製作濃縮咖啡的過程中，這些二氧化碳受到壓力，融進咖啡之中。不過，當熱水通過咖啡粉餅，從粉碗裏流出來時，就能從 9 個大氣壓回到正常的 1 個大氣壓。此時因爲壓力的差距，讓二氧化碳膨脹開來，油脂於是順勢包住二氧化碳，而由於油比水輕的化學性質，就形成所謂的油脂。</span></div>

	<span style="font-size:16px;">油脂反映咖啡生豆的狀況，油脂越多，代表著咖啡豆天然的含油量越多，亦即代表咖啡豆新鮮。不過，有油脂的咖啡，並不一定就等如那是一杯好的濃縮咖啡，例如 Robusta （延伸閱讀：你喝對咖啡了嗎？） 咖啡豆的油脂就相當豐富。</span></div>

	<span style="font-size:16px;">濃縮咖啡其實最直接、簡單地展示咖啡原本的風味，因此豆子不好、粉磨得不好、粉壓得不好、機器操作不當、萃取時間過短或過長等，都會影響一杯濃縮咖啡的風味。所以下次來一杯濃縮咖啡時，別太急於用油脂去判斷咖啡的好壞。</span></div>
