歐洲<a href="https://www.gafei.com/bk-jingpinkafei">精品咖啡</a>協會(SCAE):成立於1988年,屬於歐洲體系,由尋求咖啡極致品質的同好共同組成,且被政府認可,以“科學方式”精算咖啡各面向數值,成爲享譽全球的國際組織。</div>

何謂一杯“<a href="https://www.gafei.com/bk-jingpinkafei">精品咖啡</a>”? SCAA與SCAE給的定義:協會認爲一杯精品咖啡並不單指已被衝煮好、送到消費者口中的那杯咖啡,而是強調生產這杯咖啡的整個流程,而這流程從農民、挑選豆子的生豆商、烘焙生豆的烘焙師、衝煮咖啡的咖啡師到最後品嚐風味的消費者,都是成就一杯精品咖啡的重要角色 。</div>

不過咖啡達人林奐也提到:協會給予一杯咖啡那麼嚴苛的定義,除了爲推廣精品咖啡之外,也額外產生了許多相關的證照課程。 因此,一杯咖啡凡是可追溯其咖啡豆的生產履歷、消費者覺得好喝並符合心中期待的C/P值,就可稱之爲精品咖啡! 所以熱愛咖啡的人,不必將品嚐咖啡當作“考試”般嚴肅,可以在“懂”與“不懂”咖啡定義之間,盡情找尋屬於心目中最完美的精品咖啡樂趣!</div>

咖啡豆種類地區分析</div>

世界上生產咖啡的地區分佈於赤道以南、以北一帶,也被稱之爲“咖啡帶”,在咖啡帶之間生產的咖啡豆種類共有10幾種,但目前最爲普遍看到的咖啡豆種類,僅有阿拉比卡豆與羅布斯塔豆2種。</div>

在早期咖啡尚未風行之前,因取得優良咖啡豆的管道有限,因此普遍生長在亞洲地區的羅布斯塔豆較爲盛行,此種豆子一般種植在海拔較低的地區,因受到氣候的影響,豆子的脂肪與糖分含量都較低,且喝起來的味道較苦、強烈,沒有太多風味變化與特色。</div>

另一種種植在高海拔地區的阿拉比卡豆,是市面上絕大多數精品咖啡豆的種類,因爲它處於海拔較高地區的關係,生長速度較緩慢,能夠發展出風味健全的豆子,也因此綜合來說,阿拉比卡豆的味道較甜、柔和並富有果香,並受到咖啡人的喜愛。</div>

雖然能將常見的咖啡豆劃分爲上述2類品種,並將其特色概述,但實際上咖啡豆的風味除了受到海拔高低影響風味外,連土壤、季風、氣候變遷等都會使之產生口味變化,因此每個生產咖啡豆的國家、莊園的風味都有所不同,可先以世界地圖來找喜愛的豆子風味,若有興趣再深入研究該國不同莊園生產的豆子,這樣會更有效率的找到適合自己的精品咖啡。</div>

認識咖啡豆處理程序</div>

1日曬法 <br />最古老且省事的處理方式,以天然日曬將連皮帶肉的咖啡生豆自然乾燥,因此味道濃郁、狂野。</div>

2水洗法 <br />目前最普遍的生豆處理法,讓去除咖啡豆果肉,帶着果膠的咖啡豆種子放進發酵水槽,以發酵方式去除果膠,發酵完成後洗淨豆子後再使其乾燥,因在此過程中酸質會滲入生豆內,因此水洗法的豆子酸味會較日曬重、風味較乾淨。</div>

3半日曬法 <br />將傳統日曬法改良,把咖啡豆果肉去除,留下果膠後再進行日曬,因此風味較無日曬法如此強烈。</div>

4半水洗法 <br />此爲少數使用的方法,差別在於半水洗法以機械去除果膠,因此風味沒那麼酸,喝起來會介於日曬豆與水洗豆之間。</div>
