烘豆子看似簡單,其實沒個2-3年的練習很難得出烘焙結論。</div>

例如要了解生豆的目數,品種,海拔,含水量,硬度密度、水活性、樣品試烘、風門係數、抓烘焙度、曲線設定、不同豆的烘焙度養豆期都不同。</div>

還得了解烘焙原理,直火、半直火、熱風 對豆子的影響,煤氣的穩定度、大氣壓、環境溼度、環境溫度變化。都會對烘焙造成影響。</div>
<div>
</div>
<div>
再接着採購烘焙機,入門小產量國產的1KG級別都在3萬內能搞定,臺產的1KG要4-6萬,國外著名品牌1KG均在10-20萬這個區間內。</div>
<div>
</div>
<div>
烘焙真想掌握迅速還得上一些烘焙前輩的課,這些課級別都是5千-2萬的價格。</div>
<div>
</div>
<div>
所以自己玩玩還好,真要做商業量產還是推薦用烘焙商做出品。</div>

建議從本地的咖啡烘焙商採購。 當然並不是所有掛自家烘焙就能說是好的出品。 記得考察一下他們的烘焙設備, 烘焙師資質, 生豆質量, 衛生環境, 杯測參考等。</div>

本地烘焙商的好處是:</div>

1. 成本優勢。 本地烘焙省去商業品牌豆價格中的的代理費, 各經銷商的差價, 物流運費等等。</div>

2. 質量可控。</div>

3. 方便溝通, 拿貨送貨。 少量多次。</div>

</div>
<div>
4. 新鮮。 新鮮。 還是新鮮。 熟豆最佳時期在1到3個禮拜左右。 超過3個禮拜, 咖啡熟豆的風味開始加速流逝。 術語叫 staling</div>

不建議使用商業級別的品牌豆。 例如 ixxx, lavaxxxxx等等。 報關 > 清關 > 總部入庫 > 下級分銷 > 運輸 > 等等。 這途中已經扣掉多少時間, 環節和流程, 成本。</div>

建議從本地的咖啡烘焙商採購。</div>

意式豆和單品豆。有的店僅僅售賣意式咖啡,用不着考慮單品豆。但是根據行業的趨勢,單品豆是未來的潮流,所以強烈建議大家多考慮單品豆(如果你連這兩者都沒有概念,我建議你學習一下再考慮開店)。</div>

先說說意式豆:</div>

在想進什麼豆子以前,建議先考慮一下自己的店是什麼定位,如果簡單是定位社區店、外帶店就沒必要考慮太好的質量,反而應該考慮穩定的供應。如果定位是高端咖啡店,就要考慮質量,供應的話因爲可以找多家供應商,所以影響不大。</div>

不明白爲什麼樓上有人說不推薦Illy和Lavazza的豆子,建議大家查查這兩個巨頭是什麼來頭。另外樓上有人說豆子要新鮮,但大家知道Illy的豆子保質期是兩年的嗎(不開封的情況下)?因爲在出廠時,Illy所有的豆子都是灌氮氣保存的,所有的風味都能完整保存。小弟尤其推薦Illy的豆子,就算是高端的咖啡店,直接用Illy的咖啡豆也是高端大氣上檔次的。重點是Illy的配方一絕,是行內公認穩定、質量好的代表。而且Illy大集團,上哪都能拿到貨,能長時間保證出品。不過要注意的是,Illy假貨比較多,最好找信得過的供應商拿貨,不然被坑了都不知道。</div>

說實話,意式豆非常不推薦使用小型烘焙商的貨。第一,小型烘焙商不能保證產量,想想萬一你突然缺貨找他要個十來包,又給不了你是什麼體驗?第二,小型烘焙商不能保證質量。可能你試過的第一批貨很好,但由於豆源等限制,往往不能保證質量穩定在一個等級,這對咖啡館也是很麻煩的一件事情,難道你要隔一段時間再找一批供應商?</div>

再來說說單品豆:</div>

<span style="font-size: inherit; font-style: inherit; font-variant-caps: inherit; background-color: transparent;">這東西就沒譜了,基本上沒有一家穩定的供應商,建議多試試吧。可以參考上面說的,淘寶上面隨便買買吧。但最好選本地的烘焙商,起碼可以去杯測一下保證質量。不過這麼多單品裏面,有幾款是可以穩定保證質量的:曼特寧,耶加雪啡,肯尼亞AA,巴西。建議先從這幾種裏面試,如果烘焙商能保證這幾款豆子有穩定出品,那其他應該也是不錯的。</span></li>
