巴特爾（Aida Batlle）在薩爾瓦多聖安娜火山（Santa Ana Volcano）周圍山上的自家農場種咖啡，原本和祖先一樣幾乎沒有將咖啡豆皮加以利用，不是把皮當作便宜的肥料，就是（更常是）直接丟棄。</div>

直到有一天走過一些曝曬於大太陽底下的咖啡殼，她感到一陣香氣襲來，聞起來像木槿和其他花香，才驚覺這些長久以來被她視爲廢物的咖啡殼，可能有些價值。</div>

於是巴特爾用熱水浸泡外皮，嚐嚐看味道，她說：“當時我立刻叫顧客來試一試。”</div>

10多年後的今天，咖啡皮（coffee husk），或是它更爲人熟知的名稱“cascara”正在席捲全球。星巴克（STARBUCKS）不久前在美國和加拿大推出添加cascara糖漿的新飲品，並提供由咖啡皮製成的淋醬。競爭對手STUMPTOWN COFFEE ROASTERS和BLUE BOTTLE COFFEE也把這味納入菜單，用在茶飲或碳酸飲料之中。</div>

受惠於這些咖啡連鎖店的需求，現在咖啡皮的價格已高於咖啡豆本身。巴特爾表示，她每賣1磅cascara能拿到7美元（約40元人民幣）。相比之下，目前咖啡豆均價徘徊在1.2美元左右，約是2年新低，因阿拉比卡咖啡豆供給過剩。</div>
