1.今次香港比賽時三杯 Latte Art 的構圖與其難度在於那裏?</div>

Macchiato 最需要技巧的地方是mixing,因爲不同於平常做的 free pour 或 design art。它是使用2.5oz 杯,所以 espresso 份量比較多的話,可以做圖案的空間就會比較小。所以macchiato我用了比single shot還要少的份量做這個圖案。這是一個 invert 的圖案,所以先做天鵝部份,因爲天鵝的位置會影響到反手做slow pour的位置。與剛纔我所說,free pour第一個放奶泡的位置比較重要。如果天鵝放太前的話那反手做波浪的slow pour位置就會變好窄不夠空間,這個就是free pour的難度。</div>

至於design art,我覺得是一個 technical 跟etching的balance圖案。如果 free pour 佔太多的話就會在時間上有消耗;如果etching比較多的話,難度分又會偏低。所以這次我在創作方面儘量以一個比較平衡的方法創作,在pouring的技巧之間我會多加etching去延續。這個design art會先做鰂鰭,然後用slow pour營造做咀和尾鰭,然後開始etching。我在design art圖案中採用了顏色,因爲在世界拉花大賽中,顏色在design art中越來越流行,如果想要跟世界比賽涵接的話,就要加上顏色的運用,希望可以把對比顏色強化。</div>

2.這三個圖案有沒有一個故事框架?</div>
<div>
</div>
<div>
沒有用一個故事框架思想。我的做法多數是先想free pour,然後再做design art。但也試過當我想好free pour後做design art時發現free pour的不太好,又回頭想free pour,然後又覺得design art的不行,又重新想過……這樣不停的交替。</div>
<div>
</div>
<div>
在初賽想好這兩個圖案之後,又到決賽要想macchiato。開頭會思考是否需要複雜一些會比較好,但發覺兩者取其輕。</div>
<div>
</div>
<div>
最後選了一個比較簡單,但相對較穩定的圖案,就是天鵝。</div>
<div>
</div>
<div>
3.在比賽前的構思上,有沒有想用那一杯、那一種圖案、或用那一個重點去取得分數?</div>
<div>
</div>
<div>
我的重點在於穩定性。今年的圖案比去年稍微將難度分降低,務求提升我的穩定性。因爲這個比賽不是一杯一杯來,而是同時做兩杯。</div>
<div>
</div>
<div>
如果圖案做到天花龍鳳但最後呈現不來,那只是一個幫不到你的圖案,所以這次我所選用的圖案都是基於以穩定爲主。</div>
<div>
</div>
<div>
4.用了多少時間,到最後才決定使用這三個比賽用的圖案?</div>
<div>
</div>
<div>
圖案是在6月開始已經在作初步的構思,跌跌撞撞的在七、八月決定了free pour的圖案。</div>
<div>
</div>
<div>
但真的全部圖案很穩定的就是在初賽前幾個星期,然後就開始瘋狂的去練習,朝9晚11。</div>
<div>
</div>
<div>
用奶量高峯期一天用一箱。跟去年練習的時候一樣,就是鍛練肌肉的記憶力,做到可以很穩定做出要做的圖案。</div>
<div>
</div>
<div>
5.在構思的時候,有沒有其他人協助這三個圖案?</div>
<div>
</div>
<div>
我的教練-Chris,我就像交功課一樣,每次完成一幅圖就拍照傳給他。</div>
<div>
</div>
<div>
他就判斷這個圖案做兩杯的完成度,究竟可不可以容易的完成。</div>
<div>
</div>
<div>
因爲初賽跟決賽,都只有8分鐘跟10分鐘。我們最終還是要看整個流程到底夠不夠時間完成圖案,所以真的好像計數一樣。</div>
<div>
</div>
<div>
11.參加了兩年的HKLAC,覺得在比賽中有什麼得著?</div>
<div>
</div>
<div>
個人的耐性、那一份固執。</div>
<div>
</div>
<div>
當你練到一個時候而圖案還沒練成,手的肌肉開始疲倦,越練就越失真。其實是沮喪,加上練習時不止你一個在練。</div>
<div>
</div>
<div>
就像練流程、預測 preparation time 的時候,你身邊有同事、教練在陪著你。發生這樣的狀況,我只能交到這樣的水平出來。</div>
<div>
</div>
<div>
其實會更加沮喪,是蠻大的壓力。我還好,因爲就算我遇上壓力,我睡醒後第二天又再重新來過。</div>
<div>
</div>
<div>
12.進入到決賽,有沒有覺到那一位是勁敵?有做什麼調整面對對手?</div>
<div>
</div>
<div>
當然是有對手,但我覺得不論對手有多強,始終都敵不過自己。</div>
<div>
</div>
<div>
你永遠是你自己最大的敵人,如果始終克服不到自己的心魔,到臺上做不出平時練習的水平,那你其實是不尊重你的對手。</div>
<div>
</div>
<div>
有這麼好的場地、這麼好的機會讓你跟高水平的對手去對撞,你卻交不出水平,甚至會對自己生氣。</div>
<div>
</div>
<div>
13.開始爲世界賽作準備嗎?</div>
<div>
</div>
<div>
要重新從構思圖案開始。因爲香港賽沒有世界賽中的art bar。</div>
<div>
</div>
<div>
我們先籌備初賽的art bar,然後纔看我現有的3個圖案有沒有需要大改善地方,甚至需要轉圖。</div>
<div>
</div>
<div>
始終時間有限,所以已經開始構思。基本上macchiato還是會用現在的圖案,但free pour和design art還需要斟酌。</div>
<div>
</div>
<div>
14.想要向那些人說感謝?</div>
<div>
</div>
<div>
首先是我的老闆。他全力的支持,承擔了這麼多牛奶和豆子,還有去年到臺灣特訓,也是老闆包辦。</div>

講到拉花,我要多謝臺灣一位很厲害的拉花老師 - 彭思齊老師。我幸運的從第一次學拉花就是由他授教,每一次比賽都是遇著他教我。</div>

今年我沒有找他做特訓,但去年從他身上學到的東西,我今年終於可以好完整的展現出嚟。</div>

從教我如何打奶泡、如何做turlip、在做兩杯圖案時如何去分奶、怎樣可以令到奶泡保持smooth……等等,都是由他教出來。</div>
<div>
</div>
<div>
第三位是Chris,我一直以來的technical或是rules的coach,流程應該怎樣走、那一個部分要取下分數,都是他幫我調整。</div>

</div>
<div>
最後當然是全公司的同事,他們都在我練習的時候充當我的technical judge,幫我留意有那些壞習慣、甚至是做失的部份。</div>

15.有什麼建議給初學拉花的朋友?</div>
<div>
</div>
<div>
不能以爲拉花是一件“把牛奶倒出來就做到”的簡單事情。實在有遇過有些朋友來到,滿心歡喜的以爲在一、兩個小時就可以倒個奶做出一個圖案。直到上堂以後才發現,原來拉花是要牽涉很多東西:首先奶泡要打得好,再來是mixing混合,然後再要看放奶泡的角度……每一樣都會牽涉到。所以如果不介意從基礎學起,拉花是一件蠻有挑戰性的事情。</div>
