隨着咖啡在中國的升溫，我們聽到咖啡“杯測”一詞的幾率越來越高、看到咖啡“杯測”場景的次數也越來越多。但當聽到“咖啡杯測大賽”時，你是否清楚它到底指的是什麼比賽？賽的又是什麼？</div>

咖啡杯測大賽一般有兩種，筆者將其通俗地稱爲“神豆大賽”和“神人大賽”，望文生義，前者測的是“豆”，豆的滋味、風味、口感等方面的品質特徵，後者測的是“人”，人的味覺、嗅覺等感官辨識、判斷能力。</div>

咖啡杯測，指的是由專業杯測人按照公認的杯測規則和程序，對咖啡豆的品質指標進行評測打分。目前獲得公認的杯側規則和程序是由“美國精品咖啡協會”（Specialty Coffee Association of Amrica -- SCAA）和“超凡一杯”（或稱“卓越杯”）（Cup of Exellence -- COE）這兩個機構制定的，全球最重要的咖啡杯測大賽也是由他們兩家每年分別舉辦的咖啡生豆大賽，即前文所說的“神豆大賽”。舉辦方將收到的咖啡生豆交由專業烘焙人員烘焙至指定的烘焙度後密封保存，在規定的時間內，由一組專業杯測人員進行盲測（每款豆子只有編號，因此杯測人員不知道它是哪裏的、什麼豆子），用每款豆子製作出5杯咖啡後，這組杯測人員按照杯測規則通過聞、吮吸咖啡液使之成霧狀佈滿整個舌面並直達後上齶，來體會各款咖啡的個性特徵，分別對每款咖啡的幹香、溼香、厚實度、滋味、餘韻、均衡度等7~10各方面打分，將各評測人員的打分加權平均後，即得出每款咖啡豆的得分，獲得高分者勝出。這兩項咖啡生豆杯測大賽近幾年十分火爆、激烈，獲得高分的咖啡豆在拍賣時的價格更高甚至天價而成爲“神”豆，Geisha就是其典型代表。</div>

另外一種咖啡杯測大賽即所說的“神人大賽”相對簡單，帶有更多的娛樂和參與性。主辦方爲參賽人準備8組（每組3杯）供24杯咖啡，每組的3杯中有2杯是相同的而1杯不同於其它2杯，參賽人通過聞和吮吸來從每組的3杯中挑出1杯他認爲不同的咖啡，正確率高、用時少者獲勝。每組3杯咖啡呈三角狀放在一起，因此也稱三角杯測法（當然還有其它三角關係）。這種大賽，比的是參賽人的嗅覺、味覺、記憶和判斷等方面的能力，看似簡單，其實也不易，比如許多選手發現經常是喝到第3杯時早已忘了第1杯是什麼記憶，而這個比賽是計時的。這項大賽的國際賽事是World Cup Tasting Championship，傳奇人物是2009年時任Five Senses’ 咖啡公司的品控經理Ben Bicknell先生，他在2009年澳大利亞咖啡杯測大賽中以1分29秒的時間，將8組咖啡中的不同的1杯咖啡全部正確挑出從而創造記錄（不知近年是否有新記錄） 成爲“神人”。</div>
