相信不少朋友都看過一則新聞:<span style="font-size:18px;"><span style="color: rgb(25, 25, 25); font-family: \'PingFang SC\', Arial, 微軟雅黑, 宋體, simsun, sans-serif; line-height: 38px; font-style: inherit; background-color: transparent;">阿拉比卡正在瀕臨滅絕。<span style="font-size:14px;">新聞大意說的是由於氣候原因,野生阿拉比卡將會在2080年在野外滅絕,也即是說,到那時人們就沒有美味的咖啡喝喇!<br />
那麼問題就來了,爲什麼是阿拉比卡,而不是羅布斯塔?阿拉比卡更美味,而且在全球範圍內作爲商品流通的70%都是阿拉比卡咖啡,這應該是更加高級和優秀的品種,種植範圍應該更爲廣闊纔對,爲什麼卻是先面臨滅絕?<br />
這就不得不對阿拉比卡和羅布斯塔生物學上作分析,也就是我們今天所探討的話題了——誰纔是更高級的?<br />

首先我們來看看這2者的生長條件<br />

阿拉比卡和羅布斯塔雖然都生長在咖啡帶:</span></span></span><span style="color: rgb(51, 51, 51); font-family: arial; font-size: 16px; line-height: 24px; text-align: justify; font-style: inherit; background-color: transparent;">南北緯45°之間,<span style="font-size:14px;">我們常常會說</span></span><span style="font-size:14px;"><span style="color: rgb(51, 51, 51); font-family: arial; line-height: 24px; text-align: justify; font-style: inherit; background-color: transparent;">阿拉比卡的種植海拔在800米以上,阿拉比卡對種植條件要求高,抗病蟲害的能力弱。</span><span style="color: rgb(51, 51, 51); font-family: arial; line-height: 24px; text-align: justify; font-style: inherit; background-color: transparent;">羅布斯塔的種植海拔在800米以下,羅布斯塔適應能力極強,對病蟲害具有較強的抵抗能力。<br />

這裏就會產生兩個問題:對病蟲害的抵抗能力,和對環境的適應能力。<br />

對病蟲害的抵抗能力<br />
<br />
什麼是對病蟲害的抵抗?簡單來說就是不被喫絕的能力呀!想想看,如果你是咖啡葉鏽病真菌,或者是喫咖啡豆的蟲子,你會更喜歡溫暖潮溼還是寒冷乾燥?當然是前者了!那相對而言,如果我是長在溫暖潮溼環境的咖啡樹,想要持續地繁衍後代,就需要進化出能夠抵禦疾病和害蟲的能力來,而其中一個能力,就是咖啡因。咖啡因對於人類來說是<span style="font-family: arial, 宋體, sans-serif; text-indent: 28px;">世界上最普遍被使用的精神藥品,而對</span><span style="font-family: arial, 宋體, sans-serif; text-indent: 28px;">自然來說就是天然的殺蟲劑,能使吞食含咖啡因植物的昆蟲麻痹。<br />
<br />
說到這你就明白了,爲什麼羅布斯塔的咖啡因含量會比阿拉比卡高几倍。物競天擇適者生存,這正是達爾文<span style="font-family: arial; line-height: 20.02px;">《物種起源》的核心思想。<br />

對環境的適應性<br />
<br />
關於適應環境,上一條就是對外界侵害的一種適應力,而其他的適應性,包括對溫度和溼度,生長環境聚變時的生存能力(主要是氣溫變化),旱澇災害,風災等我們繼續聊~<br />
<br />
海拔,這是阿豆和羅豆生長區的分水嶺,溫度當然是海拔越低越高,那麼我們世界目前咖啡帶內是海拔高的地區多還是海拔低的地區多?而文章一開始說的2080年預言阿拉比卡將絕技又是根據什麼因素?正是溫度。對於物種而言,只有適應生長環境才能繁衍,從這方面來說羅布斯塔就是更加符合生存的一方。</span><br />

那說到對環境聚變和其他災害的適應力,就不得不從基因角度切入了。我們大概都知道阿拉比卡種的染色體是44條,而羅布斯塔的染色體是22條;阿拉比卡是自花授粉,羅布斯塔是異花授粉。<br />
<br />
染色體越多,基因的複雜度越高,也許是更加高級,但是我們的重點是——授粉,也就是遺傳這一環節。<br />
<br />
通常情況下,異花授粉得到的植物品質較高——通過異花授粉產生的後代擁有兩種親本植株的遺傳性狀從而很可能產生新特性,幫助它在多變的環境中生存下來。實際上阿拉比卡,尤其是過去美洲阿拉比卡種咖啡是相當脆弱的,這要從它們最初的來源回溯。第一棵植根於美洲大陸的咖啡樹是來自於荷蘭,而由於阿拉比卡自花授粉的特點,在不斷繁衍的過程中基因會越來越單一(沒有外來基因的參與),因此若出現某些病害或者災害就可能把帶有同一基因的咖啡團滅!所以現在科學家纔想方設法對阿拉比卡進行雜交以提高基因多樣性,或者回到咖啡的起源地埃塞俄比亞這個天然咖啡的基因庫去尋找解決之道。<br />

其中卡杜艾和卡蒂姆就是兩個明顯的例子<br />

卡杜艾是由<span style="color: rgb(25, 25, 25); font-family: \'PingFang SC\', Arial, 微軟雅黑, 宋體, simsun, sans-serif; font-size: 16px; line-height: 30.4px;">是新世界與卡杜拉的混血(種內雜交),</span><span style="color: rgb(25, 25, 25); font-family: \'PingFang SC\', Arial, 微軟雅黑, 宋體, simsun, sans-serif; font-size: 16px; line-height: 30.4px;">它繼承了卡杜拉樹身低的優點,一改新世界的缺點;也彌補了阿拉比卡果子弱不經風的缺陷。結果紮實,遇強風吹拂不易掉落。</span><br />
<br />
卡蒂姆<span style="padding: 0px; margin: 0px; outline: 0px; zoom: 1; font-family: 微軟雅黑, 黑體, Arial; line-height: 22px; font-size: 16px;">是卡杜拉和帝汶的混血(種間雜交),它有着高產,抗病性好的特點,但是風味就較爲平淡了。</span><br />
<br />
反過來說,純羅布斯塔種就自身的異花授粉就能更好地保持基因多樣性,而且在遺傳過程中產生的基因突變也會更容易保存和傳播,對於種羣的繁衍可以說是更加優越。<br />
<br />
接下來說說栽種的問題,越高海拔地區的生態鏈是越脆弱的(生物多樣性少),所以優質咖啡的種植者必須在咖啡樹周圍種植各種的植物,保護森林和動物,使用有機肥料等等,以保證生態不被破壞,否則阿拉比卡咖啡就更加難以生存。而羅布斯塔呢,種植條件粗糙一點也能生存,也就是更加適合環境了。<br />

說說人類的選擇問題,說阿拉比卡比羅布斯塔高級的人,實際上說的是風味上更優。人類最初攝入咖啡豆的原因,是因爲它能使人亢奮,是生物對自然利用的一種表達。而後來更多選擇地種植阿拉比卡,則是因爲它美味。但是拋開風味看生物上的利用,也許就是羅布斯塔的天下了,畢竟它還有更多的咖啡因可被提取;然後我們再看看環境價值,一項研究印度咖啡種植現狀的調查發現,種植阿拉比卡咖啡的咖啡農有75%會使用殺蟲劑,而種植羅布斯塔的只有19%會使用殺蟲劑(畢竟人家自帶殺蟲劑),這對於鳥類和其他動物來說羅布斯塔也許更加保護環境,對周邊的生態多樣性也是一個很好的保護。</span>當然,在鳥類多樣性高的森林棲息地,研究者也發現了較高的其他物種的多樣性,比如哺乳動物,兩棲動物和喬木,其中一些是非常罕見的物種。這表明山脈的咖啡種植園對鳥類和其他生物的多樣性並沒有造成很嚴重的傷害。<br />
