	<span style="font-size:16px;">　　咖啡豆被消費者帶回家中後，究竟要如何保存呢？ 我們知道影響黴菌生長的環境因子是溫度與溼度，因此在高溫多溼的臺灣，如何保存咖啡豆，便成爲顧客常常詢問我們的問題了。 而其中最常見的問題就是：&ldquo;到底要不要放冰箱？ &rdquo;</span></div>

	<span style="font-size:16px;">　　由於冰箱溫度低、溼度低，因此被當作現代人保存食品的通用解決方案。 但爲何我們不會建議使用這種方式來保存咖啡豆呢？ 因爲使用冰箱保存咖啡豆，基本上是忽略了咖啡豆的使用方式纔會做出的建議。</span></div>

	<span style="font-size:16px;">　　存放在冰箱的食品，無論是冷藏室還是冷凍室，只要一拿出來就會發生&ldquo;冷凝水&rdquo;，也就是我們常見的&ldquo;流汗&rdquo;，例如我們到超商挑飲料，門一打開後玻璃門就瞬間起霧凝結外部空氣的大量水份，必須等一段時間纔會被冰箱的風扇抽走。 所幸冰箱內的汽水飲料與啤酒們都有完整密封的外包裝，否則在冰箱們開開關關幾次之後，水氣早已滲入食物中，發生變質的風險自然大大提升。</span></div>

	<span style="font-size:16px;">　　相同的事情也發生在咖啡豆身上，但是咖啡豆與飲料不同，豆子的包裝不如寶特瓶、鐵鋁罐，當消費者把冰冰的咖啡豆放到室溫中後，無法阻絕冷凝水滲入包裝附着於咖啡豆身上，於是咖啡豆再拿出來的時候，溼度立刻大提升，搭配上室溫存放， 反而變成黴菌滋生的良好環境。</span></div>

	<span style="font-size:16px;">　　爲了避免拿來&ldquo;流汗全身溼搭搭&rdquo;的咖啡豆變質，消費者只好再把咖啡豆冰回去，利用冰箱的冷卻功能再把咖啡豆水分抽乾，而在幾次反覆之後，咖啡豆最重要的風味就隨之散逸，消費者只剩下隨時間氧化的油耗味可以品嚐。</span></div>
