想像你現在走進深受「第三波咖啡浪潮」影響的咖啡店,點了一杯小白咖啡(flat white)。捧在手上的這杯咖啡萃取的很完美,十分美味…等一下!拉花呢?店家犯了大錯嗎?還是這其實沒什麼大不了的?</div>

拉花已成爲精品咖啡的基本要素,我們看待拉花已超越了純粹品評。它已不可或缺。但拉花除了好看,還能帶給咖啡其他益處嗎?我決定從六個面向判斷拉花實際帶給咖啡多少益處(或壞處)。你以後到底要不要拉花呢?本文將帶你一探究竟。</div>

一、口味</div>

只要混合蒸奶與義式濃縮,就能做出以牛奶爲基底的咖啡,所以混合的方式可大幅影響咖啡風味。</div>

</div>

2005年五月時,「Barista Hustle」的領導人Matt Perger針對拉花進行測試。他煮了兩杯卡布奇諾,兩杯的牛奶與義式濃縮比例相同,兩杯都有拉花,但他攪拌了其中一杯,讓牛奶均勻混入咖啡(同時毀了表面的拉花),再親自盲測那兩杯咖啡。結果如何?如果想要咖啡的口味協調,可能不適合拉花。拉花在咖啡表面形成一圈純咖啡脂,展現對比與對稱美,也許好看,但可能會影響咖啡的圓潤風味。但若沒有拉花,義式濃縮尋常的苦味與濃醇油脂,就能搭配牛奶,引出豐富、強烈的風味。</div>

不過,拉花還有第三種選擇——既可繪出美麗的拉花,也不會讓你在啜飲第一口咖啡時「苦」不堪言。一般人認爲Scott Rao是推廣這第三種拉花法的人:首先將比重較高的牛奶,倒一點點進義式濃縮,攪拌均勻,去除咖啡脂的苦味,再用平常的方式完成拉花。這麼做能去除剛開始飲用時出現的苦味。我認爲這樣做拉花也會更好看,因爲咖啡的褐色色調更均勻。</div>

二、涉及多元感官的風味體驗</div>

品嚐一杯咖啡,可說涉及了口味、香味、口感,它們造就了咖啡的風味,但有些人認爲咖啡的風味,不單單是這三點。</div>

在咖啡交流平臺「Little Black Coffee Cup」的一篇訪談中,《SCAE Sensory Educations》的作者Ida Steen提到:「有些人寫作時,將風味描述成多元感官的體驗,甚至包含視覺與聽覺。」在「SCAA」的網誌中,Olivia Auell同樣寫到音樂的影響:</div>

「如果你今年有參加Re:co Symposium(譯註:一個美國的咖啡論壇),可能也有參與「音樂實驗」,也就是讓受測者搭配不同類型的音樂品嚐咖啡。節奏緩慢、觸人心絃的音樂會引出咖啡的苦味,明亮活潑的音樂則凸顯甜味。」</div>

同時,有學者於2014年在牛津大學發表了論文,研究結果指出,如果將沙拉擺盤成知名畫作,能提升餐點的「美味」,這篇論文還上了同儕審查的期刊「Flavour」。</div>

所以你手中這杯白咖啡的風味,受許多因素影響,除了咖啡本身的風味,還有周遭環境的氣味(噴太多香水的顧客或熱食的氣味)、店內播放的音樂,甚至咖啡表層的拉花圖樣。</div>

三、下功夫就有價值</div>

美食配送中心、米其林星級餐廳,或任何供給好食物的地方,都很重視食物上桌時的風貌。</div>

</div>
<div>
精心呈現於食客前的菜餚,不僅是好食物,還道出餐點上桌前的旅途風貌:一羣技藝嫺熟的人,細心處理細節,竭盡所能做出最棒的產品。在他們眼中,食物非常寶貴,值得花費這樣的心思料理。</div>

</div>
<div>
許多研究指出(包含前述的牛津大學論文),精心呈現的食物能提升「食物的CP值」。咖啡也有類似的效果,美麗的拉花背後是心血的凝聚:某些對咖啡很有興趣的人費時練習,學會拉花的技藝,他們特別下功夫,就是爲了呈現一杯「色味俱全」的優質飲品。當然,口味非常重要,製作拉花同時,咖啡師也要用心調整咖啡研磨粗細,微調義式濃縮的配方,這樣上桌的咖啡才堪稱完美。</div>

但按理來說,優秀的拉花,確實是咖啡師的心血結晶。</div>
