精品咖啡(Speciallty Coffee),是由 Erna Knutsen 於1974年首次在《茶與咖啡貿易》雜誌的其中一期中提出的,用來描述在特定的微環境中產出的具有最佳風味的咖啡豆。</div>

精品咖啡(specialty coffee)也叫做 "特種咖啡""精選咖啡"。它是指由在少數極爲理想的地理環境下生長的具有優異味道特點的生豆製作的咖啡。取決於他們所生長的特殊的土壤和氣候條件他們具有出衆的風味。這類咖啡再經過嚴格挑選與分級,其質地堅硬、口感豐富、風味特佳,纔算是精選咖啡豆。</div>

現在主要是採用手泡咖啡製作方式製作的咖啡,以發揮出咖啡豆本身具有的風味。精品咖啡對人身體健康沒有壞的影響,適量飲用反而有益。</div>

1.精品咖啡由精品咖啡豆製作。如果製作咖啡的豆子不是精品咖啡豆,製作出的咖啡液不能稱爲精品咖啡。</div>

2.精品咖啡是新鮮的咖啡。不管是食品還是飲料當然是越新鮮越好,精品咖啡也是如此。精品咖啡製作前應保持咖啡豆的新鮮,包括烘焙豆的保存,在製作之前纔將咖啡豆磨成粉,這也是要保留其最原始最好的風味。而手泡咖啡製作方式就是這樣一種製作精品咖啡的方式,它也是最能保留咖啡原來風味的咖啡製作方式之一。</div>

3.精品咖啡是好咖啡,對健康無害。不同於用劣質咖啡豆製作的咖啡,精品咖啡採用優質咖啡豆,新鮮製作咖啡,對身體健康無害,適量飲用反而有益身心。</div>

4.精品咖啡有豐富美好的味覺感受。即使採用精品咖啡豆製作的咖啡也不都是精品咖啡,這就要看它是不是充分發揮了咖啡豆的特色,是不是具有美好的味覺感受,如果沒有,那也不能稱爲精品咖啡。</div>

目前國際社會上並沒有明確的精品咖啡判斷標準,在這裏將美國精品咖啡協會的標準和咖啡生產國的基本標準稍作說明。</div>

美國精品咖啡協會標準:</div>

1.是否具有豐富的幹香氣(Fragrance)。所謂幹香氣是指咖啡烘焙後或者研磨後的香氣。</div>

2.是否具有豐富的溼香氣(Aroma)。溼香氣是指咖啡萃取液的香氣。</div>
<div>
</div>
<div>
3.是否具有豐富的酸度(Acidity)。是指咖啡的酸味,豐富的酸味和糖分結合能夠增加咖啡液的甘甜味。</div>

4.是否具有豐富的醇厚度(Body)。是指咖啡液的濃度與重量感。</div>

<div>
5.是否具有豐富的餘韻(Aftertaste)。是指咖啡的餘韻,根據喝下或者吐出後的風味如何作評價。</div>

6.是否具有豐富的滋味(Flavor)。是指滋味,以上齶感受咖啡液的香氣與味道,瞭解咖啡的滋味。</div>

7.味道是否平衡。是指咖啡各種味道之間的均衡度和結合度。</div>

生產國評價標準:</div>

1.精品咖啡的品種。以阿拉比卡固有品種帝比卡或者波旁品種爲佳。</div>

2.栽培地或者農場的海拔高度,地形,氣候,土壤,精製法是否明確?一般而言海拔高度高的咖啡品質較高,土壤以肥沃火山土爲佳。</div>

3.採用的採收法和精製法。一般而言採用人工採收辦法和水洗式精製法爲佳。</div>
