	　　新的商業規則?</p>
<p>
	　　前不久，在紐約學習的周小姐向鈦媒體介紹了一款名爲Cups的咖啡消費APP。這款應用很簡單，打開APP，用戶可以看到幾個不同價格檔位的預設套餐，讓消費者以優惠服務約30%的價格一次性購買同等數量的咖啡。下訂單後，需要享用時再到附近心儀的門店領取&mdash;&mdash;無需再支付額外費用。</p>

	　　Cups的價格檔位包括兩類，分別可以購買基本款和任意款的咖啡：對紐約一家普通的咖啡店來說，黑咖啡和花式咖啡分別爲2-3美元和4-5美元，用Cups購買的計劃一般可以獲得每杯幾十美分的優惠，還免去了正常購買的稅錢 。消費者按照以下操作步驟，把錢包和信用卡丟在家裏，即能買到划算的咖啡了(這裏唯一的限制：30分鐘內最多隻允許購買一杯)：</p>

	　　爲紐約人而生的App</p>
<p>
	　　事實上， 2012年Cups就在地球另一端誕生了，五個以色列的高中同學在一次聚會聊天時萌生了這個新鮮的想法 。短短兩年，Cups從特拉維夫和耶路撒冷的8家咖啡店鏈接了當地100多家獨立咖啡店。2013年底，Cups瞄準了紐約這個聚集了更多咖啡愛好者和獨立門店的超級市場，於去年4月正式上線，沒想到第一週就賣出了上千杯咖啡。</p>
<p>
	　　美國的咖啡文化在半個世紀內經歷了幾次變革。如今，美國成爲了咖啡消耗量最大的國家。1964年的《紐約時代》曾發表文章稱，紐約市的露天咖啡館僅有約30家;而當時的歐洲，咖啡館幾乎遍及大街小巷。並且店主允許客人一整天泡在店裏消磨時光，相比之下，美國店主並不歡迎在店裏逗留的客人。</p>
<p>
	　　正是包容的多元文化和快節奏的生活方式讓美國的咖啡文化蓬勃發展，咖啡成爲代表美國人現代生活和快速消費的標誌性產品之一。相比歐洲人喝咖啡的優雅情調，美國人的咖啡喝的率性又自由，Cups的出現可以說把握了最好的時機。</p>
<p>
	　　一年的時間，這款應用已經接入了紐約市170餘家獨立咖啡店。</p>

	　　&ldquo;我們通過簡單的鏈接，給獨立咖啡店或中小經營企業提供更多的可能性。目的是讓每一家店保持自身特色的同時， 加入一個更大鏈條中&rdquo;，Cups的創始人之一Gilad Rotem一個月前在接受美國科技媒體Tech Crunch採訪時說。</p>

	　　Gilad Rotem還在媒體採訪中表示，&ldquo;希望Cups繼續成長，鏈接紐約200家咖啡店，爲中小企業提供與星巴克競爭的機會。&rdquo;這是Cups的主要商業目的。</p>
<p>
	　　顯然這些獨立經營的咖啡店並不能單純靠Cups平臺盈利，但他們爲什麼樂於合作呢?按照Greenwich Village一家叫Uncommons的咖啡店店長的說法，&ldquo;Cups基本上向我們支付每杯咖啡一半的價格，它的確爲我們帶來了很多新生意。但同時，也存在因價格優惠而帶來的損失。&rdquo;</p>

	　　本質上，Cups平臺爲咖啡商戶們帶來了流量。咖啡店經營者更希望客人喝咖啡的同時，也喜歡上他們的點心和三明治。</p>
<p>
	　　Cups App的發明在新型的商業模式上先邁出了一步，這個規則的建立讓Cups更像是一個發現獨立咖啡店的小工具，也用來尋找紐約市那些真正愛咖啡的人 。</p>
<p>
	　　複製到中國市場可能嗎?</p>
<p>
	　　咖啡早就像豆漿一樣被國人接納並青睞。有數據顯示， 目前大約有七成國人飲用咖啡，其中三成人已經養成每天必喝的習慣。同時，逐漸流行起來的咖啡文化讓小資一點的創業者選擇了咖啡店這個平臺，經營起他們心中的夢想咖啡館。</p>
<p>
	　　而咖啡店的經營並沒有想象中容易，即使採用低價的策略，也無法同星巴克這類明星品牌競爭。況且，這些獨立經營的咖啡店往往主打格調和情趣標籤，這無論讓店內的裝潢還是咖啡的製作都有不菲的開銷成本。假如每杯咖啡售價25元，恐怕每天要至少賣出150杯才能保本，若是城市的黃金地段，就更難達到保本標準。 在杭州這樣的二線城市，只有1/3的咖啡館營利。</p>
<p>
	　　星巴克在不久前宣佈，計劃在2015年將中國的門店數量擴展到1500家，堅持將它&ldquo;快消&rdquo;的咖啡理念進行到底(包括提供精品咖啡同時，利用可帶出門店的紙杯、 高峯時段快節奏的音樂和那些並不舒適的座椅，儘快&ldquo;趕走&rdquo;顧客，爭取繁華地段更大的顧客流等)。</p>
<p>
	　　近幾年，突然火爆了的漫咖啡計劃將門店在未來兩年擴展到200家。這個品牌選擇的是&ldquo;原生態&rdquo;的設計概念，除了咖啡，漫咖啡把心思用在了華夫餅和其他小喫上，爲朋友聚會、交談提供了可選場所。</p>
<p>
	　　一直以來，外資品牌咖啡店對於本土的獨立咖啡店造成了不小的競爭壓力。咖啡消費這個市場的進一步擴容，要求更多的中國咖啡行業經營者瞭解社會需求，因地制宜調整經營思路。幫助紐約人&ldquo;團購&rdquo;咖啡的Cups模式，能否適應中國的土壤呢?(本文首發鈦媒體)</p>
