	　　現在提起埃塞俄比亞的咖啡豆，大部分咖啡愛好者第一反應就是耶加雪菲，其他反應可能不外乎哈拉爾，原生瑰夏，利姆，西達摩。而這兩年耶佳的風頭也依然有增無減，讓人對這款小型號的豆子着實刮目相看。</p>

	　　關於耶佳雪菲，確切說來很早以前就進入了國內，只不過當時叫摩卡，後面分產地叫耶佳，而後開始流行，最近三四年伴隨着越來越細化的分級，耶佳雪菲越來越紅火。而究竟有多少紅火呢，不妨讓我們看看下面幾張圖。(價格就抹去了。免得有些異議)</p>

	　　在我們旗下的2個淘寶網店裏，前三中就有兩款是耶佳雪菲可想而知其熱度。</p>

	　　耶佳的成名是因爲其水洗處理法帶出的標誌性柑橘檸檬花，還帶有檸檬紅茶的味道，而現在更令人稱道的是其日曬的熱帶水果味。耶佳雪菲因爲其易識別的風味，受到了許多咖啡愛好者的追捧，也讓許多初步接觸到咖啡的人感受到了有別於之前速溶，星巴克的味道。</p>

	　　當然耶佳雪菲也會弄出一點小的烏龍。</p>

	　　由於耶佳本身顆粒小豆子爲主，所以適合中淺烘，畢竟是原生種，不可能和中南美洲的豆子以大小出口的豆子一樣均勻。耶佳的分級以物理缺陷和杯測品質綜合打分。所以其實原生豆子大小並不一致，但是現在市面上的耶佳大小卻出奇的一致，就是不大。參考一下西達摩日曬G3其實就可以知道原生種長什麼樣子，然而還有看見豆商生豆資料寫耶佳豆種爲鐵畢卡。按常理果酸味那麼豐富，也應該是波旁。</p>

	　　耶佳雪菲作爲當之無愧的第三波咖啡代表，其特色之一就是其易於識別的風味。第二易於在a值55的時候表現出其特色，比對起傳統的中南美洲水洗豆需要更深的烘焙度，可能適合的a值在25~40左右。</p>

	　　至於爲何，儘管有人喜歡拿一張圖表去解釋烘焙溫度時間長了風味酸味會降低，苦味會增加，但是實際上咖啡的口感和咖啡豆本身都是很奇妙的東西。不是說酸味燒沒了剩下的就都苦味了，也並不是說酸味這些香氣物質是固定不變的。而圖表沒有告訴我們，這些損失的香氣香味依然可以轉化成其他物質。我們口腔感覺的複雜程度並不是圖片上幾根線畫畫上去的。</p>
<p>
	　　咖啡豆是植物果實的一種，同時也是一種農作物。而耶佳雪菲的存在更好的詮釋了咖啡是水果這一個屬性。第三波特質咖啡一直想詮釋出咖啡的地域風味，至於這個問題看看反文化的咖啡風味輪就可以知道，有近一半的有關於水果的風味描述。還有許多讓人一看就能想到是水果的特徵，以下不做贅述。而耶佳的風味大家可以對號入座進行比對。</p>
