<p>
奶泡製作</p>
<p>
將牛奶倒入奶泡壺中,份量不要超過奶泡壺的1/2,否則製作奶泡的時候牛奶會因爲膨脹而溢出來。</p>
<p>
將牛奶加熱到60度左右,但是不可以超過70度,否則牛奶中的蛋白質結構會被破壞。注意!蓋子與濾網不可以直接加熱。(如製作冰奶泡則將牛奶冷卻至5度以下,當然,不要冰過頭而讓牛奶結冰了。)</p>
<p>
將蓋子與濾網蓋上,快速抽動濾網將空氣壓入牛奶中,抽動的時候不需要壓到底,因爲是要將空氣打入牛奶中,所以只要在牛奶表面動作即可;次數也不需太多,輕輕地抽動三十下左右即可。</p>
<p>
移開蓋子與濾網,用湯匙將表面粗大的奶泡刮掉,留下的就是綿密的熱(冰)奶泡。</p>

咖啡拉花的方法可以分爲三大類:直接倒入成形法、手繪圖形法和篩網圖形法。</p>

直接倒入成形法</p>

直 接倒入成形法所指的就是使用發泡後的牛奶,在其還未產生牛奶與奶泡分離狀態之下,迅速將其直接倒入Espresso之中,在牛奶、奶泡與Espresso 融合到一定的飽和狀態後,運用手部的晃動技巧使牛奶泡利用水紋波動的原理,浮置於Espresso的表面上,並利用各種不同的晃動控制技巧而形成各式各樣 的圖形。其形成的圖形又分爲兩大類,第一類爲各種心形與葉子形狀線條的組合圖形。第二類爲具象的動植物線條圖形。</p>

直 接倒入成形法是咖啡拉花技巧中最困難的方式。因爲這種方式必須注意各種細節,從Espresso的狀態、牛奶發泡的方式與組織細緻程度,到兩者融合方式的 技巧,再加上直接倒入成形法,拉花圖案成形的時間是十分短暫的,所以還需要非常流暢而且有節奏的動作和迅速精確的手部晃動技術,而大部分人就會因爲沒有辦 法達到這些要求而退卻,因此想要成爲真正的咖啡拉花高手,就要不斷地認真練習哦!</p>

手繪圖形法</p>

手 繪圖形法,就是在已經完成Espresso與牛奶、奶泡融合的咖啡上,利用融合時產生的白色圓點或不規則圖形,使用牙籤或針狀物,沾用可可粉或巧克力等醬 料,在咖啡表面勾畫出各種圖形。其圖形大部分可分爲兩種,一種爲規則的幾何圖形,多是使用各種顏色的醬料在完成融合的咖啡表面上,先畫出基本的線條,再利 用牙籤或針狀物勾畫出各種規則的幾何圖形。另一種爲具象的圖案,例如,人像、貓、狗、熊貓等動物圖形。</p>

篩網圖形法</p>

篩 網圖形法的原理十分簡單,一般來說分爲兩種表現方式,第一種方式就是在牛奶做完發泡動作後,先靜置約30秒左右讓牛奶跟奶泡產生一定程度的分離效果,然後 利用湯勺先擋住部分的奶泡,讓牛奶跟Espresso先行融合,再使用湯勺將奶泡覆蓋在咖啡表層形成雪白狀的表面,之後利用刻有各種圖形或字樣的網版或篩 網,放置於距離咖啡表面約1cm處,撒上可可粉或肉桂粉在各式網版及篩網上,使咖啡表面呈現各種圖形或字樣。</p>

第二種方式與第一種做法相似,但不同之處在於,牛奶做完打泡動作之後不要等待,直接讓牛奶泡跟Espresso進行融合動作,要特別注意不要在咖啡表面產生白色的奶泡。</p>
<p>
篩網圖形法是所有咖啡拉花技巧中最簡單的方式,你可以自己刻出各種圖形或字樣的網版,也可以再配上簡單的手繪圖形法加以變化,創造出更多有趣的圖案。</p>
