Steam Milk就是將鮮奶加熱並且將空氣均勻混入融合的一項技巧</div>

一.蒸奶要蒸到什麼樣的溫度</div>

先了解一下奶泡形成的概念</div>
<div>
</div>
<div>
奶泡的形成是因爲鮮奶中的蛋白質受熱產生細微薄膜分子,包覆住蒸奶旋轉時液麪空氣,並混合脂質附著在液體中。</div>
<div>
</div>
<div>
所以我們將蒸奶管放置在鮮奶液麪時,表面空氣會藉由蒸汽加熱蛋白質,產生黏膜包覆進鮮奶之中</div>
<div>
</div>
<div>
而我們把蒸奶管埋進去一點,蒸汽就無法混入表面空氣,但會持續加熱鮮奶,並且均勻混合比重較重的鮮奶,和比重較輕的奶泡</div>
<div>
</div>
<div>
同時奶泡會藉由旋轉、翻滾而更加細緻,過於粗大的奶泡則會破裂</div>

瞭解基本奶泡形成概念後</div>

一.蒸奶要蒸到什麼樣的溫度</div>
<div>
</div>
<div>
蒸奶建議的溫度是在60-65度左右,因爲鮮奶中的蛋白質在超過60度左右就會開始變質,穩定性變差</div>
<div>
</div>
<div>
過高的溫度,可能會使奶泡組織瓦解,重新獲得一杯熱牛奶</div>
<div>
</div>
<div>
雖然說乳糖會隨著溫度升高,溶解於鮮奶之中,增加鮮奶甜度,但60-65度的溫度其實就足以獲得一杯很甜的鮮奶了</div>
<div>
</div>
<div>
二.空氣混入的時機點</div>
<div>
</div>
<div>
前面提到,奶泡可以透過旋轉、翻滾而更加綿密細緻,並且過粗的奶泡也會因此破裂</div>
<div>
</div>
<div>
所以建議在一開始就將所需的發泡量打足,也就是一開始蒸奶時就混入足夠的空氣</div>
<div>
</div>
<div>
接下來的時間,就把蒸汽管稍微埋深一點點把奶泡打綿吧</div>
<div>
</div>
<div>
另一方面鮮奶在溫度較低時,發泡能力也比較好。</div>
<div>
</div>
<div>
三.要如何讓奶泡細緻且均勻融合在整個鋼杯內</div>
<div>
</div>
<div>
要讓奶泡細緻,需要足夠的旋轉與翻滾時間,所以在一開始就打入所需空氣,保留足夠時間打綿奶泡是很重要的</div>
<div>
</div>
<div>
接下來就要注意到均勻混合比重不一樣的鮮奶與奶泡了</div>
<div>
</div>
<div>
方法有翻滾跟旋轉的方式</div>
<div>
</div>
<div>
我自己在實際操作上,兩種方式都會使用,但會依照鮮奶量來做決定</div>
<div>
</div>
<div>
使用350cc容量鋼杯,我會使用旋轉的方式,以蒸汽管插入液麪45度角,即可構成整杯奶泡上下左右均勻混合</div>
<div>
</div>
<div>
如果是600cc容量以上的鋼杯,那我除了旋轉之外還會藉由偏垂直的蒸汽管角度讓奶泡做翻轉</div>
<div>
</div>
<div>
去避免底層的鮮奶沒有均勻的與奶泡做混合</div>
