什麼是綿密的奶泡呢？
第一個標準是，“表面要能反光”。這個說法是很客觀而且直接的，至少它可以做爲一個標準通過肉眼看出來。
第二個標準是：表面沒有一粒粗泡沫。這個需要很到位的奶泡控制能力，當然這也是反光的前提。那什麼是粗泡沫呢？如果非要給它下一個定義的話，我認爲大於直徑 1mm的都叫粗泡沫了。
打發出的奶泡越細膩，則單個奶泡中所含空氣越少，密度高，浮力小；打發出的奶泡越粗糙，則單個奶泡中所含空氣越少，密度低，浮力大。如打發出的奶泡較爲粗糙，奶泡會快速浮於牛奶表面，融合度較低；如打發出的奶泡較爲細膩，奶泡浮於牛奶表面的速度會緩慢，融合度較高。
第三個標準是：在加奶量一致的情況下（都加在缸嘴底部的位置），不管打六成滿還是七、八、九成或全滿，打出的溫度要一致，不能以溫度的高低來調節奶泡的多少。
打奶泡如何製作綿密細緻的牛奶泡
最後，我們再告訴你如何製作綿密細緻的牛奶泡。我們在製作良好的牛奶泡組織時，有許多不同的方式，不過都包含了二種階段：
第一個階段是：打發，打發就是打入蒸汽使牛奶的體積產生髮泡的作用。 蒸汽棒的位置如下圖，我們在打發牛奶的時候就要把握好蒸汽棒的位置，這樣往往能讓我們事半功倍。
打奶泡如何找到蒸汽棒的角度 ，許多人都習慣將蒸汽棒擺在奶缸的2-3點或者9-10點的方向(以缸嘴作爲12點方向爲前提)

找到蒸汽棒的角度除了擺放正確的蒸汽棒位置，蒸汽棒與液麪的角度也非常重要。
蒸汽棒過於垂直，大部分蒸汽都向下噴出，難以讓牛奶形成小漩渦：蒸汽棒過於平，大部分蒸汽又會向平行方向噴出，讓小漩渦太大形成亂流導致難以控制或者牛奶溢出。

第二個階段是：打綿，打綿就是將發發泡後牛奶，利用旋渦的方式綣入空氣，並使較大的奶泡破裂，分解成細小的泡沫，並讓牛奶分子之間產生黏結的作用，使奶泡組織變得更加綿密。
在市面上的牛奶發泡方式有很多種，不過大致上分爲二大類：一種爲邊打發邊打綿，就是打發牛奶跟打綿牛奶泡的階段結合在一起。另一種爲打發、打綿的階段分開，也就是先打發牛奶再打綿牛奶泡。
牛奶在打發的時候我們要使用蒸汽讓其儘快旋轉並且形成一個小漩渦。這樣可以把比較粗的奶泡捲入牛奶中，使牛奶在打發後有綿密的狀態。

【進氣】：打開蒸汽開始進氣，觀察牛奶表面，如果牛奶旋轉起來沒有聽到滋滋滋的聲音，說明氣沒打進去，這時需要把奶缸稍微下放一點，把噴嘴露出一點，以便進氣，聽到滋滋滋進氣聲的同時，停止下放奶缸，保持原處不動。這時要觀察牛奶運動的狀態，正常情況應該是邊進氣邊液體邊旋轉，形成漩渦。
下移奶缸進氣的動作一定要細微漸進，不能過猛，聽聲音差不多是在進氣狀態就要穩住並停止下放。

打奶泡先打發再打綿
1、將蒸汽管放置於鋼杯的中心點，斜右上方45度靠鋼杯杯緣處，深度約1公分的地方。（這個深度會比較普遍，但是面對蒸汽強度不一的咖啡機，這只是一個建議。）
2、打開蒸汽管蒸汽，鋼杯慢慢往下移動，並使牛奶呈現上下翻轉方式滾動慢慢讓體積發泡膨 。
3、發泡膨脹至八分滿時，將蒸汽管拉斜移至於鋼杯的中心點右方靠鋼杯杯緣處，使牛奶泡呈現旋渦方式滾動。
4、控制鋼杯角度與深度將較粗奶泡捲入，打至所需溫度即停止。
用家用咖啡機玩拉花的同學們，如果你一直都打不出均勻細膩的好奶泡，請不要沮喪。如果你家的蒸汽棒是類似圖一這種帶外殼無噴嘴的設計，而且能觀察到蒸汽棒外殼上有小孔（如圖），那麼你打奶泡的姿勢可能需要跟普通噴嘴有所不同——你打奶泡的時候就不需要淺插液麪、打進空氣，也不用考慮什麼“哧哧”響聲，直接從頭到尾深埋牛奶，攪起旋渦就好了
打奶泡打出分層的奶泡要怎麼解決：
1、將裝有奶泡的拉花缸放垂直與檯面進行碰撞，這樣會使大的奶泡破滅成小的奶泡，大奶泡都破滅之後，水平搖晃拉花缸，讓奶泡旋轉碰撞，也會消除掉一些大奶泡，綿密的奶泡就像鏡面一樣很光滑，有光澤。
2、使用勺子將奶泡上面一層大奶泡刮掉，留下下面的綿密奶泡。
3、將裝有奶泡的拉花缸倒入另外一個拉花缸，行業稱“分缸”。
